Healthier Annie's Fruit Salsa and Cinnamon Chips

I absolutely love this recipe. The fruit really does not need any sugar if you use 3 T of preserves. It's seriously one of my favorite snacks!

Almond Rhubarb Coffee Cake

I make lots of rhubarb recipes and keep very few - they just don't 'do it' for me.. This one, though, is a keeper! I love the addition of almonds on top. I did make changes that other people had suggested - almonds only on top, cinnamon in the topping, and using applesauce instead of oil. I also used 3 c. of rhubarb. I also made it in a square cake pan to keep and two small loaf pans to give away as gifts. They all turned out great! I'll be making this one again and again!

Grilled Pheasant Poppers

Wow, these are great. My husband hunts but I hate eating pheasant so we usually give it away. This is the best pheasant dish I've had. I took it to a NYE party and people really loved them! I live in MN so grilling is tough in the winter... I just baked them and they turned out perfect!

Fresh Tomato Salsa

I have been making salsa like this for years, although I never measure what I put in, I just use what's ready in the garden. I do agree that 5 serranos are too many. I usually use one jalapeno or 2-3 serranos. Also, you MUST try it sometime with lime zest. Zest a whole lime, then take the whole lime's juice. The zing you get is outstanding!

Mom's Pumpkin Pie

This is an awesome recipe! I can't believe how easy it was to make. I used a pre-made pie crust and had it in the oven in about 10 minutes! I took the advice of others and used 1 cup of milk and all I had was half-and-half instead of heavy cream. It was a bit of a bummer because with a deep dish pie shell, it still was too much filling - I ended up throwing about a half cup of the filling away. I think if I used a 9" deep dish pie plate it would have fit perfectly, so next time I'll give that a try. Honestly, the taste of this pie is right on the mark! Perfection!

Sandy's Casserole

Not my favorite. I can see making something like this with a homemade white sauce that would taste much better than cans of soup. I used the "healthy request" cream of chicken and mushroom and I sauteed the onion and added green pepper before mixing. I also used fresh chicken breasts and pre-cooked the noodles a bit. It's just too thick and fake tasting for me. No matter how you change it, it's still a canned soup recipe - and it tastes like one.

Chocolate Chiffon Squares

I made these three times in a week! Everywhere I went people devoured them! Yum. Definately make them in a jelly roll pan. If you use a 9x13 it's more like cake - which isn't necessarily a bad thing, if you want cake. Either way, these are light, chewy and delicious!

Cherry Tomato Corn Salad

This is one of my favorite new summer recipes! I made it for a wedding shower and people couldn't stop talking about how good it was. I added some red onion for color and a little something extra. Next time I make it I'm going to try grilling the corn. What a great way to make use out of wonderful summer veggies!

Butter Roast Chicken

I have to admit, the look and smell of the sauce before pouring over the chicken made me think twice about possibly ruining a whole chicken. But I had to try it, and I'm glad I did. The seasoning was perfect and the chicken was juicy. Thanks for a great recipe - I wouldn't change a thing.

Jalapeno Popper Spread

This is a great base recipe that you can add lots of different ingredients to. I omitted the canned chilies and jalapeños and used fresh jalapeños. I threw all of the ingredients into the food processor along with half a vidalia onion. Then I mixed in some shredded monterrey jack cheese and put it in the microwave. It tasted really good with Wheatables crackers.

Sopapillas

These are just like restaurant quality sopapillas! I couldn't believe how easy they were to make! I just sifted the ingredients into my mixer bowl, cut in the shortening and then used the dough hook while adding the water. I had to add maybe an extra Tbsp or two of water. I made the mix into 8 balls then rolled them and cut into quarters. I fried them in about 3 inches of oil that was exactly 375 degrees and they turned out fantastic! Super puffy and light!

Restaurant-Style Buffalo Chicken Wings

I made chicken wings with the tips and chicken legs. They were fabulous! I actually liked them with no sauce just as much as with the sauce, so I made half with and half without. Great recipe, I'll definately make them again!

Octoberfest Pork Chops

These were great! I loved the different flavor you get, rather than the basic bbq or terriyaki marinades. I did a German themed dinner with some spaetzle and mushroom gravy. Everyone loved the chops. I made the mistake of baking them on a stone cookie sheet. The panko didn't crisp up at all - but that was my fault, not the recipe's. I will definately try these again!

Baked Ziti I

This is a good basic recipe... I followed it as written for the first time. I was afraid it would have too much sauce, but it didn't - it was just right. The sour cream was a nice change from cottage cheese or ricotta. Next time I'll use more mozzarella, and maybe add some peppers or bigger chunks of onions - that's just a personal preference though.

Rum Balls I

I usually make a different rum ball recipe for Christmas that calls for walnuts, but I ran out so I looked for one with pecans. As it turns out, I like them better this way! This is now going to be the recipe I make for my cookie trays. I always use Malibu rum for rum balls. It just goes with the chocolate perfectly and it's not overpowering at all. Thanks for sharing a great recipe!

Parmesan Puffs

I got mixed reviews on these - they're basically the same as an eclair dough except for the cheese. I've found with eclairs that people either love them or hate them, and that was the case here as well. Personally, I liked them but be aware that some people HATE that eggy taste you get with these.

This really is a great version of key lime pie. I put it in a tart pan and garnished it with limes and whipped cream. Everyone loved it - I really like the salty crust - after having it, I much prefer it to the regular graham cracker crust.

Herman Reunion Cheese Ball

Loved it! I added maybe a touch more of the hot sauce and garlic, and I used co-Jack cheese. Don't be fooled by the hot sauce - this is not hot. People that don't like spicy food should still like it! We thought it was a keeper - I make a few cheese balls, this is a great one to add to the rotation!
