I wish I could give this recipe 10 stars! This is a simple recipe with few ingredients and is sooooo versatile. By changing the type of sausage or the cheese used, you can make this recipe your own. I have found that using chicken sausage instead of pork sausage works better for me. So many people I know don't eat pork, and the lower calorie count doesn't hurt either. The chicken sausage gives the recipe a milder sausage taste, which I like. If you want a little "kick" in the flavor, use pepperjack cheese. I also lightly grease the pan prior to baking. The chicken is not as greasy as the pork and may stick. I have also used Scone mix instead of muffin mix (supermarket was out of muffin mix), and the recipe turned out just fine. If you keep the size of the balls small, you won't have to precook the meat as others have suggested. Just be sure to have a copy of this recipe on hand when you serve it!
