Scallops with White Wine Sauce II

This recipe was really good. I doubled the sauce, as others have suggested, and served it over pasta. I also added spinach and mushrooms. This one is a keeper.

Vegetarian Sweet and Sour Meatballs

This was really very tasty. The only change I made was to add minced garlic to the "meat". I did, however, find the meatballs to be a little dry. Next time I will moisten the breadcrumbs with a little milk before adding to the mixture.

Chantal's New York Cheesecake

I love NY Cheesecake and have accumulated a number of recipes for it over the years. Even so, I am always on the lookout for a better recipe. I was quite excited when I came across this one, especially with the ratings it received. It was a good cheesecake, but not great. I have other recipes that are better. Sorry.

Connie's Zucchini "Crab" Cakes

I was looking for something new to make for my two vegetarian daughters. These were good and very easy to make. I added mashed chick peas to give the recipe some protein and then baked them as others have suggested.

Marinated Baked Pork Chops

This recipe is great! Even family members who are not pork lovers thought this was good. What's even better is that the ingredients for this recipe are usually found in most kitchens. No shopping necessary. I did not change the ingredients at all except to double the sauce. I only baked the chops for a total of 45 minutes, and I removed the foil for the last 15 minutes as others have stated. The chops were moist and delicious.

Holiday Fudge Cake

I so wanted to love this cake. I did not make any changes to the recipe. The consistency is good, the glaze is good, and the cake is moist. Unfortunatley, I just didn't like the flavor of the cake. The rest of my family are die-hard chocolate lovers, and they didn't care for it either. Sorry.

Tres Leches (Milk Cake)

I was visiting my son in Atlanta, and he took me to a local restaurant and ordered me this dessert. It was fabulous. As soon as I returned home, I searched this site for a recipe and chose this one. I wasn't disappointed. This recipe was easy to make, and everyone in my house loved it. The only change I made was to add only 1/4 cup of sugar to the whipped cream insead of the 1 cup. It was plenty sweet enough. The next time I make it, I will cut down the whole milk to 1 1/2 cups instead of 2 cups, as I did have some milk that did not fully absorb into the cake. Other than that, the cake was great!

Zesty Tilapia with Mushrooms

This recipe was good!! The fish was tasty and moist. The only thing I substituted was lemon juice for the lemon zest (my family is not big on zests). I'll be making this again!

Mexican Baked Fish

Tasty and easy to make. However, I found the flavor of the salsa to be a bit overbearing and will use less next time. I also substituted bread crumbs for the corn chips. Otherwise, a nice recipe.

Aunt Carol's Spinach and Fish Bake

This is a quick & easy recipe that tastes good. I used fresh spinach seasoned with garlic & salt. I also like to remove the foil for the last 5 minutes or so of the baking time to give the top a little color. I have also made this recipe with thin-sliced chicken breasts, and it came out just fine.
