Jam Filled Butter Cookies

I made some changes to this but it came out outstanding! Here are my changes: Added about 1/2tsp baking powder, 1 tsp almond extract and 1 tsp vanilla. Also a pinch of salt. added 4 egg yolks instead of 2. I thought I was doubling but didn't double the rest of the ingredients. lol oops :p But they came out awesome so it worked out. I used raspberry jam in half and apricot in the other and sprinkled them with powdered sugar while they were hot out of the oven. Baked for 8 minutes and they were perfect. I did use a 1 inch cookie scoop and press the middle with a round measuring spoon to get a really uniform shaped cookie. Everyone loved them, they are buttery and melt in your mouth yummy :)

Winter Market Salad

Wow, yum! I doubled the dressing, used 1 large apple, 1 celery root, 3 large carrots and 2 large beets. Shredded them all with my food processor. Super easy and super yummy!

Black Bean Vegetable Soup

This recipe was great! Super yummy with some cornbread on the side. The only change I made was to use 1 can pinto beans instead of one of the black beans. I still blended the black beans but added the pinto to the soup whole. I made the sub because I only had one can of black beans in the pantry. It was still really good.

Blender Chocolate Mousse II

all I can say is WOW! I used Heavy whipping cream in place of the milk and added vanilla extract and Kahlua in place of the brandy. Those that are complaining about this being too rich and sweet I don't get! Chocolate Mousse is supposed to be rich and sweet! Wonderful topped with freshly whipped cream and sliced strawberries!

Mexican Casserole

French Baguettes

These are awesome! I made them twice this week and both times they were gone in a day! Excellent dipped in an olive oil and balsamic vinegar mixture (can you tell I'm Italian?) The only change I made was to use egg whites instead of yolk to brush the tops the second time around, it made the loaves just a bit crustier on top, but I like them either way.

Whole Wheat Bread III

I love this recipe, however I use half wheat and half white flour and sub wheat germ for the cornmeal. So yummy! This is now my staple bread around the house.

Strawberry Streusel Muffins

I really didn't like these that much. My strawberries stayed pretty mushy. To those who had the muffin stick to the liner. This is easy to prevent just place your liners in your pan and lightly spray them with non-stick spray before adding your batter.

Kentucky Biscuits

Holy cow! These were so much easier to make than the normal biscuit recipe as you avoid the whole rolling and cutting mess. I made these as stated except added a little extra sugar. I also blended the butter and dry ingredients in my food processor, this is my favorite way to cut butter in. After blending I let the dry mixture rest in the fridge for a little while to make that butter nice and cold. I ended up adding a little extra flour when kneading because it was quite sticky. But the end results were the best biscuits I have ever tasted! Not dry at all, lightly crisped on top and flaky and soft inside, Yum, yum yum! I will never make another biscuit recipe again!

Ultimate Maple Snickerdoodles

I loved these cookies! However I changed them quite a bit. I used butter instead of margarine, mainly because I just don't like margarine and almost always sub butter. I also omitted the cinnamon, added 5 T of maple syrup instead of 3, added 1/2 tsp maple extract and 1/2 tsp vanilla. I didn't have maple sugar so I just took all white sugar and shook it in a plastic baggie with a couple drops of maple extract. The dough was very soft so I made it into balls and rolled in sugar placed on cookie sheet and put it in the freezer for about 10 minutes then directly in the oven. Baked for about 12 minutes as my cookies were bigger then stated, the recipe only made about 18 cookies for me. I removed when the centers were still kind of soft but edges lightly browned, let sit on cookie sheet for a couple minutes before transfering to a cooling rack. This method always returns a soft cookie for me. The cookies were crispy on the outside and soft and chewy on the inside with a slight maple flavor even with the additional flavoring. Yummy! I might try rolling in colored sprinkles next time since my kids would love that.

Ground Beef Mexican Style

Awesome, easy recipe, I added taco seasoning and used curly noodles instead of egg since thats all I had. I also added yellow onion when browning the meat instead of green onion and omitted the bell pepper. It was awesome!
