Real Traditional Irish Soda Bread

I am really happy I tried this recipe for 2 reasons... 1) multiple reviewers state it is authentic Irish and 2) I've never used the cooking method before. I followed the instructions to the letter. (photo contributors to date could not have - recipe is for quartered circle) It was good, but flavorless. I think I need an Irishman to tell me what topping to use, as this bread is analogous to water crackers -- whatever goes on it will shine. We tried butter & honey which, while tasty, didn't seem like the right match. I won't be making this again for a family dinner, but I will keep it in mind as THE perfect choice for a thematic party or school event for "pioneer days".

Kung Pao Chicken

The description is right in stating "you can't go wrong." The flavor of this is excellent. I attempted to increase the sauce by doubling all the sauce ingredients. So... I didn't actually "go wrong", but the end result was much too thick. Adding the water/starch mix should probably be done a Tbsp at a time. I'll be playing with this recipe.

Wonton Soup

This just didn't suit for me. Hubby said "It's good" and had seconds, but we both added soy sauce to the broth. Perhaps I did something wrong, but my wrappers got VERY mushy. Perhaps I should have let them dry after filling & before boiling, but the recipe doesn't indicate that.

Too Much Chocolate Cake

After 4K reviews, mine isn't needed, but... This cake is tasty and moist. Using mini chips adds just the right chocolate without noticeable 'pockets'. I sent one to school with my kid who reports, "It tastes EXACTLY like a donut." Apparently, if you leave a piece out all night the edges dry to fried donut consistency... we'll call that a college boy's "recipe". Excellent cake, Denise.

Cashew Raisin Rice Pilaf

LOVE this recipe for its color and texture. Definitely a good choice when planning a fancy meal. Raisins are not an option in our household, so we didn't add 'em. Otherwise an excellent dish. The only reason I reserved one star is that it's really tough to make this just right (texturally). First, one has to find wild rice separate from long grain, which I eventually did, but it's expensive that way. Easier to locate are myriads of rice mixtures which, of course, cook up part mushy & part crispy. This will stay in my go-to recipes for dressed up meals, but for a staple I'll use this simply as a way to pretty up singular rice cooked per package directions.

Rueben Loaf

I wanted an easy, casual meal to serve to friends one afternoon, and ruebens seemed like a good choice. I did a quick allrecipe search, though, in case there was a recipe above the norm. This loaf was the PERFECT option. I was able to do all the prep work in advance, bake it timed to guests arrival, and remain free from the kitchen once it was time to eat. I will definitely make this again. I knocked one star off because 1) I think it needs more filling (probably heavier on the meat for us) and 2) it really should be served with Thousand Island (or a dip of Thousand Island flavor) Oh... and a little tip... use a pizza roller to cut the side strips for folding over the loaf.

Espetadas (Portuguese Beef Shish Kabobs)

Sorry to say this was disappointing. I found the recipe in allrecipes magazine & bought expensive sirloin from a good store before I noticed the lack of reviews. Still I followed the recipe to the letter - well per the magazine recommendations. (whole bay leaves, reduce salt, buy sirloin tip, and use metal skewers) While the flavor was good, the seasoning remained very mild & the meat was not tender. My husband and I ate a few pieces each, put the leftovers in the 'fridg.

Cucumber Punch

I wish there was a name that fits better than "punch". This delicious beverage is more than water with a hint of flavor, but less than a kid's party sweet punch. It's the right refreshment to keep drinking all afternoon - on a deck with a friend, at a party with a crowd, with a meal, or even spiked for a late night crowd. I made cucumber ice cubes by freezing 1/2 filled trays, setting in unpeeled cuc. slices, then adding the other 1/2 of water & final freezing. So when I served, I had lots of (regular) ice in a glass pitcher, peeled cucumber slices, lemon slices, and a few cucumber ice cubes. Very pretty! I'll be making this again! Thanks, KimmieOrlando!

Marinated Beet Salad

Mmm. I needed an easy-to-transport side dish & this did the trick! I cut the beets into strips (think slivered almond shape) which made it easy to spoon. I followed the recipe to the letter & it tasted great. Thanks, Myra!

Insalata Caprese I

Admittedly, I picked this recipe based on a photo. I liked the cut up cherry/grape tomatoes for a "dish-able" side dish. This was delicious. I cubed fresh mozz., halved red & yellow cherry tomatoes, chopped the basil (chiffonade, and thinly slice the onion. I mixed those and then waited until just before travel time (taking dish to a gathering) to add the liquids. I'll definitely make this again. Thanks, katquilter!

Bacon Wrapped Pork Medallions

Loved this recipe. I bought a single tenderloin (some stores only sell 'em 2 per pack). Seven pieces of bacon precisely wrapped the tenderloin. I'll have to practice to get the bacon perfectly pre-cooked as different thicknesses & different cooking methods play a role. (I microwaved the bacon for 1 min.) I thought the seasoning was fine (not too much salt as other reviewers stated), although admittedly I palm-measured. Per instructions I cooked in a skillet 4 min per side, but then instead of the oven I used indirect heat on the grill for about 15 minutes. I hope I remember this recipe next time I'm hosting guests -- it's pretty, easy, delicious, and convenient to time with side dishes.

Grilled Flat Iron Steak with Blue Cheese-Chive Butter

The local grocery had "flat iron steaks" on sale. So... I had to try it. Based on quantity of reviews I opted for this recipe. Most of my family dislikes blue cheese, so I was lucky to find 'blue cheese butter' already mixed in the grocery gourmet section. I was happy to buy that for a few dollars vs. all the ingredients for higher cost. Guess what? NO topping necessary! The meat was tender and delicious marinated and grilled. This recipe (minus topping) will be a staple for us now. As for the blue cheese butter -- turns out it's pretty good on 'loaded' sandwiches. (you know, with tomato, lettuce, avocado, etc.)

Fennel Cucumber Salsa

I bought a fennel bulb because I needed the greens in a fruit compote. Found this recipe via ingredient search. Most of our family loved this salad. Those who dislike fennel agreed it would still be an awesome side dish minus fennel! Definitely will make this again... probably for company, 'cause this is a really different and pretty dish.

Summer Berry Compote

This was really expensive since I am at the mercy of grocers. But... it was also really delicious. I couldn't find red currants - not even dried - and I had to buy a fennel bulb. I picked one with the most greenery available & used all the greens. The fennel was very subtle, but still a classy addition I'd keep. I brought the compote to a gathering & the hostess served it over angel food cake. I thought it worked well. Definitely will make this again. Thanks, Amelia!

Chicken Fiesta Salad

I followed the instructions to a T except I used the grill instead of a skillet to cook the chicken. I cut back on the seasoning because I'm a complete wimp in terms of spicy foods. This salad was delicious. Our only complaint was it seemed to lack a coating/dressing. Perhaps there's a good sauce/reduction/dressing that would compliment & add that moist/creamy texture we were missing. Even a tiny side bowl (side! I emphasize) of ranch would do the trick.

Spinach and Feta Pita Bake

I had reservations about whether all of my family had a "mature palate" for this flavor combination. No worries! The tomato hater only lessened the quantity. The spinach haters didn't mind at all. Everyone said they liked it & would eat it again. Per another review I subbed chicken (pre-cooked on the grill) for mushrooms. Only one large breast was enough for 4 pitas. ($$ saving!) Definitely will add this to our recipe box & make again.

Whipped Cream Mousse Frosting

I don't like icing/frosting, but I can "stand" light, airy versions that aren't too sweet. Needing to frost cupcakes for guests, we made this recipe as directed, and again with chocolate pudding and a tad of Kahlua. Yum. This just became my go to frosting.

Red Skinned Potato Salad

5 stars for the recipe AS IS. (Although I reduced the mayo a tad) This was delicious and well balanced. All 5 in my family loved it. 3 stars for the leftovers, though. The next day the onions took over & the bacon turned chewy. If you aren't serving 12 people, cut the recipe!

Kugel

Never made Kugel before. Made this recipe times 9. I attempted to follow it to the letter, but I think I messed up some numbers. (probably too little cottage cheese; maybe too much cream cheese) Stirring, esp. folding in 54 whipped egg whites was challenging - tranferred between bowls to thoroughly mix. Poured into 3 church baking pans & refrigerated overnight. Warmed to room temp & baked as directed. Turned out delicious. Thanks, Ann!
