Kugel

Reviewed: Nov. 20, 2011
Never made Kugel before. Made this recipe times 9. I attempted to follow it to the letter, but I think I messed up some numbers. (probably too little cottage cheese; maybe too much cream cheese) Stirring, esp. folding in 54 whipped egg whites was challenging - tranferred between bowls to thoroughly mix. Poured into 3 church baking pans & refrigerated overnight. Warmed to room temp & baked as directed. Turned out delicious. Thanks, Ann!

Roasted Vegetables

Reviewed: Nov. 20, 2011
Multiplied this recipe by 9 and had NO leftovers! I used 4 butternut squash, intending to add carrots too. (voted out by the other church dinner cook) Followed the recipe x 9 for the rest, except much less oil -- added that by eye. Found beautiful small Yukons I could just halve. Completely forgot salt & pepper (hectic kitchen) Served 65 meals then the kitchen staff of 10-12 teenagers polished off the rest!! Wonderful recipe; great for cut ahead - cook when needed. Thanks, Saundra.

Challah I

Reviewed: Nov. 20, 2011
Wow. Basically "no fail"... I bought local grocery challah & didn't deem any of it worthy of the huge dinner I needed to prepare. So on a wing & a prayer, I whipped up 6 batches back to back of this recipe. I think I might've goofed sometimes, and the church ovens vary in temp consistency. Of the 12 loaves, two were smooth despite braiding, some rose more than others, some got a bit dark on the bottom. But I didn't get a single complaint. Very pleased the loaves "reunited as one" beneath the braid bumps. (vs. breaking apart when sliced) Baked on Thursday, cooled then chilled in foil & plastic wrap, warmed in foil on Saturday -- came out like fresh baked. Perfect slightly sweet compliment to kugel by Ann, roasted vegetables by Saundra, and an offsite brisket.

Martha's Vegetable Beef Soup

Reviewed: Apr. 26, 2011
Five star ease with a 3 star taste. Mostly 'cause the onion soup mix stayed too prominent. An excellent duo with Beef Noodle Shepherd's Pie -- they have similar ingredients, one with tomato, one with potato.

Beef Noodle Shepherd's Pie

Reviewed: Apr. 26, 2011
A huge hit! Best part was that between this & Martha's Veg. Beef Soup, I got 2 meals from nearly identical ingredients. Didn't have noodles; used old frozen hash browns. Added frozen mixed vegetables. Couldn't be an easier recipe.

Marinated Turkey Breast

Reviewed: Apr. 26, 2011
My grocery only had bone-in, so the butcher de-boned & skinned a double breast for me. The string-tied breasts looked pretty thick to cook in the recommended 30 min. Webber cookbook says to sear 8 min per side over med. high then 45 min of indirect med. heat. Delicious.

Baked Sweet Potatoes

Reviewed: Apr. 26, 2011
I found this recipe to be a nice option for a colorful side dish. Tasted great. Followed the recipe exactly. Quote from my sweet potato hater: If you have to have sweet potatoes, this isn't a bad way to have 'em.

Adrienne's Cucumber Salad

Reviewed: Nov. 2, 2010
This is a great cucumber salad. I prefer the taste of my mother-in-law's fresh salad, but sometimes I need a make-ahead dish & this is it. It's sweeter than I expected & I added lots of dill. yum.

Baked Potato Soup

Reviewed: Sep. 28, 2010
I tried to ruin this & I couldn't. Well, not on purpose, but I used old potatoes beginning to shrivel, fresh basil going to seed, and 2% milk plus butter since I had no cream. I kept thinking, "This smells funky. It's going to be terrible." Nope. The family said it's great & to add it to our make again list!

Lip-smacking Popcorn Concoction

Reviewed: Sep. 7, 2010
Sounded great & the online reviews were glowing. I was sold with "never have leftovers". But... I had leftovers - practically the entire batch. Eleven teens barely touched this. Some girls ate it when I prompted late in the night. Anybody who said they liked it got a full bag to take home with 'em.

Addictive Sweet Potato Burritos

Reviewed: Jul. 16, 2010
This tasted good, but really seemed like a great option for vegetarian burritos. You know... like a vegan would say, "This is an awesome recipe". But an average omnivorous person would say, "It's okay, but I wouldn't make it again." If I'm cooking for vegetarian guests, there's better options out there. (e.g. quinoa with black beans)

Country Green Beans

I salvaged not-so-fresh grocery store green beans with this recipe. Per other reviews I also switched out the ham in favor of last minute sprinkling of cooked bacon. Delicious.

Oatmeal Peanut Butter Cookies III

Reviewed: Aug. 29, 2009
I followed this recipe exactly. Tasted GREAT. Some of mine were baked a couple minutes longer than others - family differed in which they liked better, crispy or soft. I used my regular cookie scoop, but dropped onto a plate & cut in half before rolling & putting on baking sheet. Nice size - more like the promised girl scout cookies. Um... I also had no cream on hand, so I used my hazelnut coffee creamer in the icing. I didn't taste 'the other nut', but it sure was good. Made more frosting than necessary as another reviewer stated. We still put a dent in the leftover icing by just snitching fingertipfulls.

Orange Cake

Reviewed: Jul. 31, 2009
I made this for an orange-lover's birthday. There's a seasonally available boxed orange cake that we usually use, but WOW this was better. I followed the recipe but changed 3 things per reviewers comments to make it truly ORANGE: switched orange extract for lemon, switched vanilla pudding for lemon, and added some orange peel. The glaze soaked in well. Some leached back out, but was not a problem at all. If I could convert this to a layer cake that's more 'decoratable', this would be THE annual birthday cake. Thanks, Angie!

D's Famous Salsa

Reviewed: May 23, 2009
Unless I need to put salsa into another recipe, I don't buy it anymore -- I make this one. Ingredients are easy to keep on hand for impromptu guests, too. Be sure to pulse the processor very quickly. If you've reasonably chopped, hardly any processing is needed. I use a slotted spoon to fill my serving container & drain away excess liquid if necessary.

Lime Chicken Soft Tacos

Reviewed: May 19, 2009
Wow, so good my kids asked me to go rate this! I cooked the chicken in a pressure cooker for speed, brought the 'sauce' to a boil while the chicken cooked, shredded the breasts, combined & served. I agreed with other reviewers that oregano isn't quite the right option, so used parsley (hubby has a dislike of Mexican parsley aka cilantro). Leftovers went into kids' lunch bags the next day and the last bit was fought over after school. Update!! I just learned there are two types of oregano! From an awesome catalog spice dealer: Mediterranean and Mexican oregano are two different plants, but because they are used in the same way and have a somewhat similar flavor they are both called oregano. Mexican oregano is stronger and less sweet, well-suited to the spicy, hot, cumin-flavored dishes of Mexico and Central America- perfect for chili and salsa. I ordered some of both. :-)

Baked Asparagus with Balsamic Butter Sauce

Reviewed: Apr. 13, 2009
This tasted great, but even better it's perfect for a busy cook to time everything for serving. The toaster oven is a fabulous option while other appliances are all in use. The butter can be browned & mixed with soy & balsamic in advance. I even warmed my rolls by setting them on top of the toaster oven throughout preheating & baking. Thanks for the recipe!

Roast Leg of Lamb with Rosemary

Reviewed: Apr. 13, 2009
I intended to follow the pkg directions on my "semi boneless lamb shoulder", but I panicked at the last minute & sought out this recipe. So, I didn't marinate overnight, I had to pulverize dried rosemary, and I added the suggested lemon juice. My first lamb ever turned out GREAT. Starting with a 400 oven crisped up the exterior & kept the meat moist. A foil cover is definitely a must after that. My 6.7 lbs cooked almost 3 hours to reach 145 internal temp. then after slicing off enough med & med-rare meat for dinner, the really red center went back into the oven while we ate. An excellent recipe. Thanks!

Pizza Without the Red Sauce

Reviewed: Mar. 10, 2009
We had a taste for a veggie pizza & tried this. Wow. Absolutely wonderful! This "sauce" would work well for any 'gourmet' creation. We eliminated the jalapeno (I'm a sissy), and used mozzarella instead of feta (dh doesn't like feta). Sliced our tomatoes and onions as thin as possible, and chopped spinach directly on top with kitchen shears. Thanks Aimee! This one is good enough for company for sure.

Chicken Breasts with Balsamic Vinegar and Garlic

Reviewed: Oct. 5, 2008
Had I never tried Lisa's Chicken Marsala, this recipe would've been a 5. (wish I could give a 4.9) It's great, my family loves it, but the marsala is just one notch better in our minds. This recipe is a tad closer to chicken piccata with the acidic ingredients whereas the marsala is more sweet. I'll make this again I'm sure.
