Wow, so good my kids asked me to go rate this! I cooked the chicken in a pressure cooker for speed, brought the 'sauce' to a boil while the chicken cooked, shredded the breasts, combined & served. I agreed with other reviewers that oregano isn't quite the right option, so used parsley (hubby has a dislike of Mexican parsley aka cilantro). Leftovers went into kids' lunch bags the next day and the last bit was fought over after school.
Update!! I just learned there are two types of oregano! From an awesome catalog spice dealer: Mediterranean and Mexican oregano are two different plants, but because they are used in the same way and have a somewhat similar flavor they are both called oregano. Mexican oregano is stronger and less sweet, well-suited to the spicy, hot, cumin-flavored dishes of Mexico and Central America- perfect for chili and salsa.
I ordered some of both. :-)
