Lemon Bars I

These lemon bars are easy to make and result in a nice, traditional lemon bar. The crust was a little harder/crunchier than I would prefer but it wasn't going to break a tooth or anything! ;)

Beer Dip I

I made this for the 4th of July and it was a hit with everyone! I loved that it was so easy to put together. We had it with braided pretzel sticks. Mmmmmm!

Bacon Cheeseburger Pasta

Fantastic rice! I did vary a few things based on what I had on hand...brown rice instead of white, fresh tomatoes instead of canned, and I added a sliced up roasted jalapeno to take place of the chilies in the canned tomatoes. It has just the right kick!

Acapulco Chicken

This made a good weeknight dinner and was so easy to prepare! I used fresh tomatoes and cut up a roasted jalapeno I had on hand in place of the canned tomatoes. It had just the right kick for us, served with the Spanish Rice II recipe. If you like really spicy food, I'd add something extra. Also made great leftovers!

Fried Mozzarella Cheese Sticks

These cheese sticks are fabulous, especially served with buffalo wings! My husband and I love them! The only thing I do differently is I use cut-up pieces of mozarella from a block of cheese rather than the string cheese...it's a great way to use leftover cheese from making pizza or lasagna, etc.

Buffalo Chicken Sauce

This sauce is just what I was looking for...I was looking for the taste of buffalo wings we get at restaurants like Chili's. This was so easy I didn't think it would be that good but it was perfect! My husband was an instant fan and has asked for chicken with this sauce a number of times already. Mmmmmm!

Pork with Squash and Onions

This was a really good, hearty recipe that both my husband and I enjoyed. I was skeptical that the squash would cook in time, but it did! Just be sure to cut it up into small pieces like the recipe says.

Awesome Ham Pasta Salad

I didn't have the pickles on hand so I used relish instead and a little bit of vinegar and water for the pickle juice. It had a strong vinegar-y taste to it but my husband and I liked it, it wasn't so bland like many other pasta salads! I'm looking forward to trying it again with the pickles and pickle juice instead!

Aimee's Quick Chicken

This has a slightly unusual taste but is WONDERFUL! I made it last night and my husband and I both loved it. I used real bacon and had to make homemade teriyaki sauce because I didn't have any on hand (I used soy sauce, garlic, mustard, and ginger). Definitely a keeper!

Chicken Fried Chicken

I really liked the texture and color of this chicken and will definitely be keeping the recipe. The only thing is that I found it could use more seasoning...I added a full tablespoon of seasoned salt and I still don't think that was enough. So next time I'll probably add more salt and maybe some other spices or herbs.

Apple Pork Chops

This was a good recipe - not our very favorite, but I think it would be a good one to keep in the recipe box! It is a mild-tasting dish that nobody objected to, and was a nice change of pace from some of the other pork chop dinners I serve.

My Mom's Sausage & Rice Casserole

I made this recipe with a turkey smoked sausage instead of the pork sausage. It turned out okay - my husband and I liked it, but not enough to make it again, I think. I think it just wasn't exactly our taste. My husband did like his with mustard...

Dill Dip II

This dip was a snap to make and was well received by my guests! I didn't use the monosodium glutamate...instead I just used a little more of the spices called for. We served it with carrots as well as tortilla chips and it went well with both. A really nice, versatile dip!

Easy Homemade Chili

This was so easy to make, and tastes great!! My husband and I both loved it! I only had marinara sauce on hand so I used that in place of the tomato sauce. AND I had to cook the chili a lot longer than 15 minutes to get it thick enough. I'll definitely be making this one again, but I think I'll add less water next time around...

Peanut Butter Chews

I learned how to make these cookies in middle school home ec class so long ago! I lost the recipe and have been making them by memory since then - which means sometimes they turn out and sometimes they don't!! It's great to have the recipe now! :) Also, these are great to make with kids - I used to make them when I would babysit and called them "goop" which the kids loved!! Finally, you can also use rice krispy-type cereal in place of the cornflakes, if you like.

Apple Crisp III

This recipe was fairly quick and easy to throw together and tastes GREAT!! It just took longer than stated to cook and the top never really browned. I'm thinking next time I'll reduce the amount of water - that was probably the cause. Really yummy!

Apple Coffee Cake With Brown Sugar Sauce

I wasn't particularly impressed with this recipe and probably won't make it again. It could be because I didn't make the sauce with it - didn't have brandy on hand. I did like that this cake was very moist, but didn't like the way the crust turned out - it was difficult to cut through.

Bean and Sausage Soup

This is a good recipe but I found it to be a little bland - I suggest that if you make it you taste it ahead of time and plan to add seasonings to your taste. I marked it low on quickness because you have to soak the beans overnight, and then it goes in the slow cooker - so you have to start a day or so ahead of time with this one! And there are vegetables to chop, so I marked down on easiness because of that. But it really wasn't difficult to make and smelled great while it was cooking!
