German Chocolate Cake III
I halved the recipe to make 12 cupcakes and these taste amazing. For a cupcake, the cake part is very light. However, its so moist and melts in your mouth. A tip for other cupcake makers. This batter doesnt give you that mushroom top, so be careful to not overfill or the cake oozes over the sides and sticks to the muffin tin. I will definitely be using this recipe again and its going into my recipe book.

Golden Cakes
I used 2 tsp. of vanilla instead of using almond extract. I also used all room temperature ingredients. The recipe was easy as cupcake recipes go, and these didnt taste bad. The draw back is that the tops get hard and taste like sugar cookies and the center is chewy. Again, they didnt taste bad at all, its just the hard exterior and chewy interior. If you like that, then you will like this recipe. For my purposes, I am still on the hunt for the best vanilla cupcake that is moist throughout, with great vanilla flavor. This wasnt it. If anyone has one, please share!

Salsa Chicken Rice Casserole
Im giving this a 4 because I didnt necessarily care for it, but my family did. Maybe I should have let it bubble more in the oven but it had an overwhelming soup taste not so much of a salsa flavor. Also, I cut back on the cheese as we are eating healhier in our house. I cut back to 1.5 cups of 2%cheddar which was still plenty.
