About this Cook
I like easy to make, tasty dishes and trying to make things out of what I have on hand. Once in a while I like to go out on a limb and try making something that's a little out of my comfort zone.

When I first moved to Texas I moved from a house with a gas oven to one with an electric one. Something about it, I must have ruined 3 or 4 batches of cookies before I got the baking times right.

Homesteader Cornbread
Just made these to go with some hatch chile chili. I used what I had at home (blue corn meal instead of regular & almond milk instead of regular milk) and they came out great! I baked them in a muffin pan for 25 min., recipe makes 18 cornbread muffins. I'll make a bit of honey butter to go with the left overs!

Connie's Zucchini "Crab" Cakes
I made these tonight for a potluck, they were a hit with veggie and meat eaters alike! I followed the suggestions of previous reviewers by salting and pressing the zucchini to reduce moisture. I also used whole wheat bread crumbs and used 1 1/2 tsp of old bay per batch. I made a double batch and rolled them a bit smaller to yield about 18 appetizer sized cakes. Instead of frying, I baked them on a lightly greased cookie sheet at 400 for 10 min, then flipped and baked for another 10 min. I'll definitely make these again!

Quinoa with Asian Flavors
Loved the flavor, I'll probably cut down on the liquid next time, or maybe I toasted it too long? The texture of the quinoa was a little mushy to me.
