Best Guacamole

Perhaps I had bad avocados, but this recipe didn't do it for me. I'd like a little more flavor. First time making guacamole. I'll be looking for a recipe with a few more ingredients, I think.

Ranch Oyster Crackers

I used lower sodium crackers and the store brand of the ranch-dressing (as the packet showed it had lower sodium content than the name-brand). Using all of the optional ingredients, these turned out WONDERFUL! They are super-easy to make and still had enough saltiness to satisfy a salty craving.

Marzetti® Hawaiian Slaw

Using pre-shredded cabbage with red/green cabbage and carrots, the light dressing, pecans, and mixed dried fruit instead of just the raisins, this turned out FABULOUS!! I was addicted, and so were the luau guests!! This went before the potato salad, chips, and even the desserts!! Definitely a winner!! 7/26/09 update: made this again for our second annual luau and once again, it was gone quickly! LOVE this slaw!

Kalua Pig in a Slow Cooker

Made four of these for a luau. First, you can find the correct pork (shoulder/butt--they are the same) at a Warehouse store (Costco) that doesn't have the saline solution, which helps to cut down on the saltiness. I found the salt (used the black hawaiian salt) at Whole Foods, in a stiff plastic bag with a zip lock type of closure--our Trader Joe's didn't have it. Definitely separate the fat from the juices before putting the juices back with the shredded pork. This turned out great-moist and tasty!! It has frozen very well and we've been eating a lot of it in different dishes since the party! This will become a staple in our household--it's just too easy not to become one!!

Spaghetti Squash Medley

Mock Coconut Pie (Spaghetti Squash Pie)

Yummy, yummy, yummy!! I just made this recipe and had a piece while it was still warm. It is absolutely yummy--strong vanilla flavor with the texture of, well, spaghetti squash (coconut). It is a yellow color, and I put some cinnamon on top--it smelled scrumptious while baking! Definitely recommend for an easy, tasteful way to get rid of an abundance of spaghetti squash.

Cranberry Sauce II

Making cranberry sauce for the first time is quite the experience!! Popping cranberries, jelling up faster than jello! This recipe was GREAT!! It set quickly, and I couldn't stop eating it!!

Bavarian Style Meatballs

These meatballs were pretty good--good sweet and sour flavor. The sauerkraut turned off some of the guests from an appearance standpoint, but the flavor really was good! The recipe calls for "tomato based chili sauce" and I had the hardest time finding it--there is chili sauce in the oriental section, mexican section, chili section, but I finally found the correct chili sauce in with the ketchup! :)

Pecan Cheddar Crisps

These weren't a big hit at the party, but they were okay. Hubby didn't care for them, but he doesn't like pecans. I made some without the pecans and he thought it was dry and not too flavorful. A little disappointed in the results, but to get rid of ingredients around the house, they are okay.

Cheese Fondue

Very good--grated the cheese, tossed the cheese in flour, rubbed down the pot with garlic, use a little realemon (didn't have a real lemon) and then followed the ingredient amounts as listed. This is a very tasty fondue that reminds you of restaurant quality. This was my first fondue--it will definitely be a repeat!! Four stars due to the directions being tweaked a bit for fool-proof fondue!

Hot Artichoke and Spinach Dip II

I made this for a girls get together--went over well. Four stars as I modified the recipe based on other's advice. Used sour cream instead of mayo, used fresh moz. instead of shredded, used all parm, no romano; used three cloves of garlic, no garlic salt, no additional salt (enough salt in the artichoke hearts and cheeses). Also, I softened the hunks of moz w/the cream cheese by placing in a metal bowl and setting in warm water for a few minutes. It turned out great--people definitely ask for the recipe on this one! This is a very thick dip--tortilla chips do not stand a chance. I served with a spoon and had some toasted cocktail breads and pita chips to serve with it.

I've made this twice now--a big hit!! I substituted walnuts instead of almonds. Also took some other advice and used 1/2 the amount of sugar--it's SO yummy!!
