Wife of a picky eater. I cannot cook anything with veggies in it...rather I have to serve them on the side to create a healthy meal for my 10 and 1-1/2 year old.
My favorite things to cook
I like quick things. I love crock pot recipes on activity nights, stove top recipes in the summer and oven recipes in the winter. I love to try new recipes but I will only attempt them if they have good reviews. Cooking dinner is actually a chore for me but I LOVE to bake. I just wish I had some sweet teeth in my house to help me eat them.
My favorite family cooking traditions
I WISH one of them were fresh pies on Holidays because I love making pies. I however don't want to step on my grandma's feet with her take n bake Sara Lee's.

The Best Chicken Fried Steak
As always, skillet chicken fried steak is a lot of work but it was a good recipe!! I never have buttermilk and always to the 1 tbls of white vinegar and fill the rest of the 1 cup up with milk...and I had more than half of the 'buttermilk' left over. I absolutely hate getting my cast iron skillet out since you don't have the convenience of throwing it in the dishwasher to wash afterward:) I ran out of all purpose flour (didn't even have enough for batter so just put in some panko bread crumbs to finish the 2 cups) but did have a packet of dry brown gravy so I prepared that using the 'scraps' left in the pan. I've been told by my husband it is the best recipe for chicken fried steak we have tried so far so I will be keeping the recipe!! And since I re-seasoned my pan with shortening in the oven, the cleanup wasn't that bad!!

Almost No Fat Banana Bread
After reading some of the reviews I also made some suggestions, such as adding an extra banana, cutting the sugar to 1/2 cup, using one whole egg, adding an 1/4 tsp salt and 1/2 cup nutmeg (next time I'll cut to 1/4 or even 1/8!!) and 2 tsp vanilla. It turned out moist and was actually not too bad. Not my favorite recipe I've tried but a much healthier recipe.

Simple Beef Flavored Gravy
For a gravy recipe so easy to make with ingredients I already had on hand and this good was a surprise!! I did add more beef base then what called for for a stronger flavor as well as seasoned it with salt and fresh ground pepper. My husband also thought it wasn't bad. This was my first time making gravy of any kind (even out of a packet!!) so all I can say is....SUCCESS!!
