Eileen's Meatloaf

Reviewed: Jan. 30, 2008
Perfect meatloaf. I only used about 1/4 cup of breadcrumbs, and 1/4 cup of grated locatelli parmesano/reggiono cheese. It was very good.

Mama's Asian Chicken and Rice

Reviewed: Jan. 18, 2011
Great great tasting recipe. I really loved this. I did not have crushed red pepper flakes or Chinese five-spice powder, but it was delicious just the same. I did add some frozen green beans in the skillet the last 20 mins of cooking. (I am a big fan of all in one meals) Served it over minute rice and it was phenomenal! I will make and eat this again and again.

Chicken Thighs Surprise

Reviewed: Jul. 13, 2007
Very good, very easy. I did not have eggplant or mushrooms, however I used some cream of musroom soup and I served it with some brown rice. We all loved it. I can imagine how much better it will taste with ALL the ingredients! Can not wait to make it again.

Stuffed Zucchini

Reviewed: Jul. 12, 2007
Great recipe!!! I did not have to alter much at all. I took the sausage out of the casings and mixed it (raw) with the rest and added just a little extra virgin olive oil. I had some HUGE zucchini from my garden so I only had to use 2. It was delicious! My family and I really enjoyed it!

Terrific Turkey Chili

Reviewed: Jan. 12, 2008
Awesome recipe, I also added 2 cans of black beans (drained and rinsed) and next time I will cut up my zucchini into smaller peices. I could not and still can not find the jar of cut green chilli peppers, so I just added a bit more chilli powder and cut up jalopenos to serve on the side. It was delicious. Great chilli.

Chicken Quesadillas

Reviewed: Jan. 30, 2008
Really good! The only thing I did differently was I sauted the onions in butter until they were soft and traslucent, (only because I do not like onions crunchy) and I added canned chicken to the onion saute since I did not have any cooked chicken ready. Then I put it into a 350 oven for about 4 min on each side. It was delicious! The combination of cheddar and mozzarella was perfect. I will definitely make this again.

Turkey and Quinoa Meatloaf

Reviewed: Feb. 23, 2011
Very tasty. I cooked the quinoa in beef broth, instead of water, and did not have tomato paste so I used tomato sauce. Very very good.

Kids Favorite Meatloaf

Reviewed: Sep. 29, 2011
Really really good. I was not quite sure what "mini loaf pans" were, so I used metal cookie cutters on a cookie sheet, (for the kids) and I made the reminder of the mixture into a normal loaf for us adults. I also did not have any wheat cereal so I used panko bread crumbs. It really turned out good. I wanted to add the mozzarella like another reviewer said, but I forgot. I will try that next time. Because the cookie cutters were pretty small, I did not have to cook that long. I took them out of the oven after about 45 mins. All in all, a great recipe. Thanks Mike B.

Kelsey's Cheesy Bacon Breasts

Reviewed: Jan. 7, 2013
Very good. I followed the basic directions and it turned out perfect. I did add mushrooms, used Monterey Jack Cheese and pre cooked turkey bacon. I also sliced the chicken breasts in half to make them a bit thinner. Very good!

Perfect! Really perfect. The only thing I added was fresh garlic, and tomato paste. I have my new favorite beef stew.

Chicken and Dumplings III

Reviewed: Jan. 12, 2008
Really good and really easy. I added fresh carrots, celery and onions (chopped them up and micorwaved them for about 5 min, then added them to the mixture.) Two days later I put the added peas to the leftovers and put them into a ready made pie crust and had a delcious chicken pot pie!

Zucchini Stew

Reviewed: Apr. 14, 2011
Very good, comfort food. I used Acini di pepe instead of rice, only because my little one has a rice allergy. I added garlic, and parsley. It was still a little bit bland, so I will try some other seasonings the next time I make it. But overall it was quick, easy to make and tasty. Thank you for the recipe.

Connie's Zucchini "Crab" Cakes

Reviewed: Jul. 24, 2007
These did not taste like crabcakes, however they were very tasty. We really enjoyed them and I will make them again. Next time I will follow the advice of others and not used "seasoned" bread crumbs, I will use more butter and more Old Bay. Very tasty treat!

Ground Turkey Noodle Bake

Reviewed: Oct. 14, 2009
I did not have any cream cheese or mozzarella cheese, so I used cubed colby/jack cheese for the cheese noodle mixture and I used the colby/jack for the topping. It turned out well. I think the noodles need a little something and maybe the meat mixture would be good with a vegetable like zucchini or green peppers. It was a very good start and my family loved it. I am looking forward to trying it again.
