Iced Pumpkin Cookies

One of our favorites! I sent a care package to my daughter at college with a variety of cookies. These she ate in one night. I added a little pumpkin pie spice to the glaze that in my daughter's words turned them into "crack" in a good way.

Buttermilk Pancakes II

Wow!! These are amazing. My husband, who is usually a thin, crispy pancake kind of guy thought these were terrific. Wonderful flavor and amazing texture. They melt in your mouth! These will be my go-to pancakes from now on.

Irresistible Irish Soda Bread

This is an excellent soda bread. Soft light texture and slightly sweet flavor. I was short on time, so I baked it in jumbo muffins for 30 minutes and they came out perfect. Each person had their own for dinner. On another day, I made this again in jumbo muffin form, but used them for strawberry/blueberry shortcakes. Divine!!

Banana Cake II

I love the texture of this cake. It is moist and light with a subtle banana flavor. I used cake flour in place of the all-purpose and buttermilk for the sour milk. Really delicious. We enjoyed it without the frosting.

Portobello Mushroom Burgers

This was wonderful. The marianade had just the right amount of flavor. I substitued lowfat feta cheese for the provolone and added sun dried tomatoes. I cooked it smooth side up first so that when I flipped it, the mushroom had a perfect cup to contain the cheese and tomatoes. Delicious!

Zucchini Patties

I made these last summer and my family LOVED them. This year my husband is working for the local radio station. The station manager always has an over abundance of zucchini so he brought some home with the request, "Can you make Zucchini Patties for the station?" So this morning I did. They couldn't stop raving about them on the air. They were even eating and talking at the same time. The recipe has been requested by many. Thank you so much for a wonderful recipe.

Mango Salsa

Wow!! What a great recipe. I added a pinch of kosher salt and subbed walla walla sweet onions for the green onions. I also seeded the jalapeno so it wouldn't be too spicy. DELICIOUS! I served it with fish along with the white sauce from the "Lime Fish Tacos" on this website. Wonderful combination. At the end of dinner, we were putting the salsa, white sauce and fish on tortilla chips. Excellent appetizer idea. My husband who was a little apprehensive about a fruit salsa in fish tacos had TWO tacos!! This is our new favorite way to eat fish.

Egg-Free Dairy-Free Nut-Free Cake

I came across this recipe while doing some research for a wedding cake I was making for a friend who is allergic to dairy and eggs. I've made a test recipe and let him and his fiance try it. They loved it. In fact they called a few days later and begged for the recipe to satisfy a "safe chocolate" craving. Not only that, but my family enjoyed it too. Nice to add this one to the cake repetoire!!

Hearty Meatball Soup II

This is one of my family's favorite meals. My son's comment is always "Oh, I love this soup!!" My daughter likes to stuff bread sticks with it. It is excellent as leftovers as well. I really love how you don't have to pre-cook the meatballs...just drop them in. I use the tiny pasta balls used in traditional wedding soup in place of the pasta shells.

Blackberry Cobbler

This is a very easy and tasty cobbler/cake. First I tried it with amixture of peaches and raspberries. Then I taught my 8-year old nephew to make it with raspberries and blueberries. It's really rich and sweet. I want to try some healthy substitutions or cut back on the sugar and butter. The recipe is so simple, it will be easy to experiment.
