Easy Apple Strudel

Sweet and Sour Pepper Pork

very good. added 4 packets of splenda instead of sugar. Drained a can of pineapples in juice (not syrup) and reserved juice. Used 1/4 cup juice instead of water & added pineapple chunks. Delish!

Mexican Sour Cream Rice

Family loved this -I thoght it was good. I added a few spices -cumin, cayenne, chili powder, onion, garlic and chipotle. Doubled the sour cream as suggested by others. With these changes it had a nice warm kick.

Best Egg Rolls

these are excellent. If you are looking for a little more seasoning - try adding a tablespoon of Oyster Sauce to the ground pork mixture. A little richer than soy and adds quite a bit of flavor.

Cream Cheese Jalapeno Hamburgers

FABULOUS! My husband didn't love the idea of a "filling" so I blended the cream cheese (about 3 oz) into the meat and added 2 jalapeno's, worchester sauce, garlic powder, salt, pepper, a tablespoon of ranch seasoning and cayenne. I just looked at the original recipe and this is nothing like it but it is still really, really good!

Sesame Noodles

great recipe - left out the soy for my husband (allergic) and added 1 tlb fish sauce and two tlb natural peanut butter. Also stir fried thin strips of beef and added bag of Chinese veggies. Added soy tableside for the rest of us - yummy! edit - instead of beef, I have also added stir fried tofu which I like even better. NO sugar - 2 packets of splenda and it is perfect!

Chimichurri Sauce

EXCELLENT! Added 2 Tlb basil, 1/4 onion & a jalapeneo. Tripled the garlic. Marinated skirt steaks with about 1/2 the sauce for 2 hours and grilled for 7 minutes each side - PERFECT.

Bacon Ranch Pasta Salad

The best pasta recipe I have ever tried! I made a few changes: 1/2 cup light sour cream & 1/2 cup light mayo, 1/2 cup peas, large pinch cayenne, 1/2 diced red onion, scallions, 1 carrot diced, 1 red pepper diced, 1/2 green pepper diced & more ranch seasoning mix & milk as needed. WONDERFUL!

Fire Roasted Tomato and Feta Pasta with Shrimp

good - a tad dry & bland so I added some lobster stock, crushed red pepper, onion & sundried tomatoes instead of fire roasted since that is what I had on hand. I also threw in some broccoli. The feta melted beautifully - and I even used fat free. Quite nice.

Taco Soup V

really good - I've been making this for quite some time and it is quite a bit better in the crock pot - excellent! Also, if you don't have a taco seasoning packet on hand, the taco seasoning recipe on this site is great!

Curried Coconut Chicken

Soooo good with red curry paste! I cooked the paste and oil (peanut and canola) for about 5 minutes, added onion & garlic and cooked another 5 minutes. I sprinkled some garam masala, cumin, s& p on the chicken and browned it before adding everything else. (used about 1 1/2 Tlb os sugar and it was perfect). EXCELLENT with peas and basamati rice!

Grilled Onions

This is to die for. I made some changes -baked in 375 oven for 90 minutes. Cored medium Vidalia onions and put a teaspoon of beef base in each, topped with pat of light butter & sprinked with pepper and thyme. added a splash of white wine and wrapped in foil. Tasted just like french onion soup - YUM! Could easily eat this alone with a fresh green salad & french bread!

Cheesy Creamed Spinach

excellent - with changes. I made it the way it was written the first time but thought there was way too much cream. The second time I sauteed the onion & garlic in butter, precooked & drained the spinach and added it to the pot and added about 1/4 cup 1/2 & 1/2, a heaping tablespoon of reduced fat cream cheese and about 1/4 cup parmesan and a pinch of freshly grated nutmeg and it was to die for. Rich and creamy...yum!

Buttermilk Pancakes II

really - the best pancakes EVER. No need to let the batter rest - they are great as is. I did add 1/2 teaspoon of vanilla and an extra 1/2 tsp of sugar to the dry batter but other than that it was PERFECT. Thanks!
