Best Bean Salad

This was great! Very simple, but still delicious! I used red wine vinegar, and reduced the sugar to 1/2 cup based on other reviews, and it was perfect. It was quite liquidy, so I think I may add more beans next time. I'll definitely make this again!

Downeast Maine Pumpkin Bread

SO GOOD! Everyone that tries it loves it! I used the disposable aluminum loaf pans so that I could easily keep one for myself, give one away, and freeze another! (It freezes well.) A few small changes: 1/2 cup applesauce for 1/2 cup oil; 2 cups white + 1.5 cups white wheat flour; 2 cups white sugar + 1/2 cup brown

The Best Rolled Sugar Cookies

These were SO great! I used the Smart Balance 50/50 butter sticks to lower the saturated fat and they worked wonderfully! We decorated them with icing made from powdered sugar and milk - they looked beautiful and tasted great too! I rolled them out on parchment paper and then transferred them to a parchment paper lined cookie sheet to bake them and had no problems with them sticking. I'll definitely use this recipe in the future!!!

Pumpkin Cake I

This was really yummy! The only change I made was to use half oil, half applesauce, and it was still very moist! I also reduced the temp to 325 halfway through because I was using a heavy dark bundt pan. I'll definitely make this again!

One Bowl Chocolate Cake III

This cake is SO delicious! It was my first attempt at a cake not from a box, and I will never go back - especially because I can control the ingredients - no hydrogenated oils or weird preservatives! I baked it in a 9x13 pan for 35 minutes and it turned out great!

Luscious Buttercream Frosting

This is SO easy and SO delicious! Exactly what I was looking for - and no shortening or margarine (so no trans fats)! I followed the recipe exactly and it was the perfect consistency for frosting my cupcakes with. Everyone at work loved it! Update: I tried this with the spreadable butter with canola oil right out of the fridge, and it worked wonderfully - even better than regular butter! I think this is because it was soft, but still cold.

JENNIE-O's Best Ever Meatloaf

This was great! I used 1 Tbsp of Smart Balance butter to cut down on the fat, and it was fine. I also used 1/2 cup dry bread crumbs instead of the fresh. There was some liquid in the pan when I pulled it out of the oven, so I poured out what I could before letting it rest for the 5 minutes. I'll def. make this again!

Grandma Minnie's Old Fashioned Sugar Cookies

These were delicious! I used smart balance butter and whole milk instead of cream and they turned out wonderfully! I had a little bit of trouble rolling them out b/c the dough was slightly sticky, but I just rolled small portions of the dough between wax paper (and used plenty of flour) and stuck them in the freezer for a few minutes before cutting the shapes. This will definitely be my Christmas sugar cookie recipe from now on!

Peanut Butter Banana Oatmeal Raisin

These are good if you really like peanut butter and banana together! I used dark choc. chips instead of raisins and this made them better. They don't change shape baking, so flatten them before you put them in the oven! I basically halved the recipe, using: 1 banana, 1/2 cup peanut butter, 3T white sugar, 1/4 cup dark brown sugar, 1 whole egg, 1/2 cup all-purpose flour, 1/2 cup whole wheat pastry flour, 1/2 tsp. baking soda, 1/2 cup rolled oats, and 1/4 cup chocolate chips. This made 18 cookies that I baked at 325 for 16 minutes.

Snickerdoodles III

Yum! I used Smart Balance butter and baked them on parchment paper at 375 for 8-9 minutes. I got about 85 cookies, so mine were on the smaller side - I think I will make them a bit bigger next time. 2 HELPFUL TIPS: 1 - spray hands with cooking spray before rolling dough, and 2 - keep the cookies in a container with a piece of white bread to keep them soft!

Best Green Bean Casserole

This was pretty good. I doubled the recipe and used frozen green beans that I thawed most of the way. I stirred about 1.5 cups of cheese into the casserole along with 1 (6 oz.) can of fried onions and used another can of fried onions on top. I did not bother microwaving the ingredients - I just put them into a 9X13 pan and cooked it at 350 for about 30 minutes before putting the rest of the onions on top.

Slow Cooker Stuffing

SO yummy! I didn't have dry bread, so I just cut sandwich bread into cubes and toasted it in the oven until it was dry. I took the advice of another reviewer and just stirred in all of the herbs, salt, and pepper into the butter before mixing it with the bread cubes. This will definitely be a repeat recipe every Thanksgiving!

California Bean Dip

This is really good served with tortilla chips, especially the "scoops" kind! The only thing I might change next time would be to cut back on the dressing a little bit... I used light italian and light ranch and it was still great!

Best Ever Banana Bread

THIS IS SO YUMMY! I have tried lots of banana bread recipes but this is definitely the best one yet. I made a few changes: used 1/4 cup applesauce + 1/4 cup oil, cut the sugar down to 1 cup, used 1 cup all-purpose flour + 3/4 cup whole wheat pastry flour, and added 1/2 tsp. vanilla. Update: I made muffins with this recipe and they turned out great! It made 16 muffins and they took about 20 minutes to cook!

Linguini with Broccoli and Red Peppers

This was very good! I didn't give it 5 starts because there just wasn't anything too special about it. I cut up some chicken breast and sauteed it with the peppers and used whole wheat linguine - yum!

Spiced Peach Oatmeal Muffins

These were good! It is my first time to bake or eat a peach muffin, and I am definitely happy with the result. I used part whole wheat pastry flour (about 3/4 cup maybe??) and used honey for part of the molasses because I don't really like too strong of a molasses flavor. I got 18 regular size muffins and baked them for only 5 minutes before putting on the topping, then returned them to the oven for the remaining 13 minutes. I definitely think the topping added to the muffin! I'll make these again when I have peaches to use up! The only problem I had was that the muffins really stuck to the paper liner, but this is easily fixed by putting them in the refrigerator.

Health Nut Blueberry Muffins

These are SO good! Up until this point I had not created an allrecipes account, but these are so good that I just had to so that I could rate these wonderful muffins! I used 1/2 cup of brown sugar and 1/4 cup white sugar and they turned out SO delicious!!!
