Favorite Old Fashioned Gingerbread

This was my first time making gingerbread from scratch. It is airy and cake like than if you were to make an actual dense loaf, although it is also quite moist. I used an 8x11 pan and coated with non stick spray. I would highly recommend using a thick coat of butter and possibly a light dust of flour. The molasses makes the batter very sticky. I read the reviews on doubling the spices after I had already put the pan in the oven. I actually think it has great flavor as is. I think anymore spice would be too over powering. I used the exact measurements of ginger and cinnamon. I don't like cloves so the only change I made was that instead of cloves I used about 1 tbs of Penzey's Cake Spice. (it contains clove and anise and other spices). I baked my bread for about 40-45 minutes in a gas oven. I think 1 hour is too long as my edges were already starting to almost burn. Over all this was a great and easy gingerbread to make in a pinch. I will be putting this into regular rotation!

No Bake Peanut Butter Pie

Awesome pie. Very easy. I used only 1 cup of the confectioner's sugar as I figured a cup and 1/2 would be too sweet. Turned out perfect. Sweet but not over the top. I used a store bought Oreo crust. I garnished with mini peanut butter cups and a chocolate fudge drizzle.

Tuna Patty Sandwiches

Spiced Sweet Roasted Red Pepper Hummus

Much better than store bought! I Omitted the cayanne pepper and the fresh parsley as I didn't have any on hand. I also used garlic paste rather than minced garlic. I added in 1 tbsp of EVOO to give it a more creamy texture. Paired with toasted pita wedges and cucumber slices this made an awesome entertaining starter. I do recommend using an emulsion blender for this. Gets rid of all the lumps.

Easiest Focaccia Recipe

I am not a huge baker so this recipe was perfect for me. I would say it makes about 8 servings if you cut it correctly. I did take the advice of others and added in about 1 tsp of salt for flavor. I customized my bread by rubbing the dough with garlic, an extra drizzle of EVOO. I topped it with sliced roma tomatoes, shaved parmesan and a sprinkle of italian herbs. I plan on making this as a side to my Italian wedding soup.

Black Bean Brownies

Delicious. I was skeptical. This is the BEST recipe and so easy. The only thing different that I did was substitute brown sugar for the white sugar. I also didn't use coffee because I didn't have any. I can see how it would cut down that bean flavor. I also used semi sweet chocolate chips because I don't care for milk chocolate.If I didn't make them I wouldn't really even notice that slight beany flavor. It didn't bother me though. My advice is NOT to skip out on the chocolate chips. It really makes them seem richer.

Banana Muffins I

Great quick and easy muffin recipe. I love how they are very light and fluffy. If you are looking for a dense cake this isn't for you. I can see myself making this with pumpkin or apple sauce. I did a few different things. I make them into mini muffins. I sprinkled a tad bit of sugar and pecans on each muffin before hitting the oven. I also replaced the 1/4th cup of white sugar with brown sugar. I can also see how the sour cream can be switched with yogurt. I may try berry yogurt and bananas next time. This one is a keeper!

Banana Pancakes I

Awesome recipe. I substituted the white sugar for a heaping tbsp of brown sugar and the oil with butter. I added a dash of cinnamon and chopped pecans into each cake as they cooked. So good, no need for butter or syrup!!! Husband and brother inlaw begged for 2nds!

Quick and Easy Pizza Crust

So easy and super fast!!! I was craving pizza but was broke. Found this recipe and voila! Perfect crust, You can make thick or thin. It made 1 extra large thin crust pizza. This is my new pizza dough recipe for now on. No more dough in a can! You can make pizza faster than delivery will deliver!

Chicken and Snow Peas

Something was missing. I just couldn't put my finger on it. But it did satisfy my craving for chinese. Plus its super healthy. I made mine with broccoli and carrots. I also cut the ginger in half as it is a very strong spice for my tastebuds. I will make it again but with a few tweeks.

Melt In Your Mouth Chicken Pie

I snazzed this up my own way by first of all omitting the eggs. Just didn't sound right to me. I added in about 1 1/2 cups of frozen mixed veggies. Just the standard peas, corn, carrots and green beans. I also only used 1 cup of broth rather than 1 and 1/4. Just seemed like too much liquid to me. I also just poured the broth and condensed soup into the same pan as the chicken and veggies. Heating the soup seperately seemed like an extra un-needed step. As far as the dough portion I added in an extra 1/4th cup butter milk. Directions should say "spread over top" rather than "pour" the batter was way sticky. I also added in about 1/2 cup of grated cheddar cheese to the batter that made it delish with a nice golden brown crust on the top!!! I will make this again!

Easy Lasagna III

I 1/2'ed this recipe because there is only two of us. I used Newman's Own marinara because I was too lazy to make my own. This recipe doesn't lie it is "Quick, Easy and Tastes Great!" I don't think I have ever made lasagna so quickly. I made mine lighter with ground turkey and I added some frozen spinach to the meat mixture. My husband was pleased and it seemed like I slaved hours in the kitchen. This would be a great recipe for first time cooks. Next time I think I will try making it with a white sauce.

Cinnamon Belgian Waffles

I omitted the cinnamon and added a tad more vanilla. Other than that I wouldn't change a thing. The stiff egg whites really make these airy and melt in your mouth. My husband asked for seconds and thirds!! I will be making these divine waffles again and again!

Creamy Au Gratin Potatoes

This is by far the best base recipe for Au Gratin Potatoes. I get asked for this dish all the time. I have since made a lot of tweeks to it. I use half cheddar and half swiss, I use half & half rather than milk and I process my onions into a pulp for a more creamy sauce before cooking in the butter. Those people picky about onions have no idea there is even onion in it! Its also a yummy sauce for mac n' cheese as well.

Cowboy Oatmeal Cookies

LOVED these easy to make cookies. The dough was perfect for scooping with my dough scooper and made perfect portion size cookies. I added 1/2 a cup of chopped pecans and 1/2 a cup of sweetened coconut rather than the butterscotch chips. I did follow the other reviewers recom'ds about adding a tsp of vanilla. I can't wait to make these again!!

Good Old Fashioned Pancakes

Great basic pancake recipe. I used 2 egg whites instead. I also added vanilla. I think next time I will use buttermilk. This is a good fool proof beginner recipe. You can add to it to make more fancy. They were really good and crisp on the edges!

Throw-Together Short Ribs

This was a fairly good recipe. I changed it up to my taste because I found it to be too sweet. I would only add about 1/3 of the brown sugar it calls for. I used a can of tomato sauce instead of the paste. I cooked about 5 hours on low and re heated the next day. Since it was too sweet I added soy sauce and hot sauce. It was perfect and delicious after my doctoring.
