Cucumber, Tomato and Red Onion Salad with Mint

I would recommend making this the day before you eat it. I ate it right after and found the mint overpowering. When I had the leftovers the next day, the flavors had blended beautifully and it was delicious.

Spicy Fisherman's Pie

I incorporated just about every suggestion from the comments and it came out delicious. It would be a 5 star if the recipe included all those suggestions. To wit: I used 1 lb of fish (rubbed some olive oil, salt and pepper on it) and 2 1/2 lbs of potatoes, added peas and an extra carrot, used less cheese than the recipe called for, added 1/4 tsp of cayenne pepper. I also didn't have heavy cream, so I ended up using 1/2 cup of half-and-half and 1/2 cup of sour cream. It was nice and flavorful, but I certainly wouldn't call it spicy. To help with texture, I coarse-mashed about 2/3 of the potatoes (yukon gold, left the skins on), layered that on the fish and vegetables, then sprinkled the cheese over that, and riced the remaining third of the potatoes (obviously, you need a ricer for that) over everything. When it came out of the oven (30 minutes at 400), the riced potatoes on the top were golden and crispy.

Rice and Lentil Casserole

This was very easy to make, hearty and with a very comforting taste. My husband and my children also loved it. The kids, who always pick the green pepper and onion out of anything I make, didn't even say anything about them in this thing. They just ate them! I used a mix of long-grain and wild rice, added some herbs and paprika for a bit of extra flavor, and had to add quite a bit more water than called for, but it cooked in about 45 minutes.

Russell's Fish Stew

My whole family loooooves this recipe. No changes needed. The cilantro is what makes it different and delicious for us, so if you don't like cilantro, I wouldn't recommend this to you. I wouldn't use dried cilantro, either. It just has a completely different flavor. I signed on to Allrecipes just so I could give this a 5-star rating.
