Pico de Gallo

Did tweak this a bit since we didn't have jalapeno or cumin. Substituted red pepper flakes for the heat and a couple of drops of Crystal Hot Sauce. Will have to try it again when we have the correct ingredients!

Good for You Greek Salad

This is a great classic recipe. I put a little less olive oil than called for. Love the feta and olives with the cucumbers and tomatoes!

Peach Blueberry Pie

Really enjoyed this recipe. I used two store bought pie crusts [cuz I was lazy] and laid the second one on top and pinched the edges together. It looked like a semi-professional job when I was done!

Easy Batter Fruit Cobbler

So awesome! I've made it twice already! I followed some of the suggestions for more fruit. I used blueberries from my back yard! I even froze some fruit for a wintertime treat when I'll make this again!

Basic Crepes

This is the recipe I've been making for over 30 years! It's a family favorite. The only difference for me is that I blend all of the ingredients for 60 seconds [scraping the sides of the blender after 15 secs]. No sifting needed! I also melt the butter on the stove before adding it to blender. I love these crepes!

Ginger Glazed Mahi Mahi

The recipe was delicious, however, I think the marinade was a little overpowering for the fresh Mahi Mahi. I loved the flavor but probably marinated the fish too long. I'd like to try it on another fish or meat where it wouldn't soak in as much! Overall, though, I liked it quite a bit!
