Rich Chocolate Truffle Pie

I thought the recipe would be sweet enough without the powdered sugar and I was right. There's enough sugar in the chocolate chips. All in all, a very good and easy recipe.

Shortbread Crust

Didn't have any shortening so I tried this crust. Pretty darn easy! And I did cut it in half as I only needed one crust for a lemon pie. Will probably use again for a strawberry pie.

Triple Berry Crisp

This was pretty good but not quite 5* worthy. Seems like there should be more filling to compensate for the double crust. I used frozen berries and the filling was just fine. Will make again, but will double the filling.

Coconut Poke Cake

I followed the directions and used a 9 x 13 dish. It was very good but also very sweet. But then... it's cake after all! I'll make this again when we need a sugar rush! Very good.

Creamy Hot Cocoa

Giving it 5 stars even though I wasn't precise with the recipe. I'm sure as written, it deserves 6 stars! We didn't have any 1/2 & 1/2 and I was out of my usual substitutes as well (evap milk, heavy cream). So I completely skipped that part. I also reduced the sugar to 1/2 cup because of previous reviews and personally I thought the extra sugar would have been fine. Cocoa is supposed to be sweet, folks! :) Next time I'll follow the recipe precisely. The 1/2 & 1/2 is already on the shopping list...

Shredded Beef Enchiladas

Made this last night using leftover pot roast. Obviously, I had to change up the recipe since the meat was already cooked. I don't want to take anything away from the recipe because I would definitely make this again the way it's written. Here's what I did in case you need a good use for leftovers: Skipped the H2O, broth and vinegar since the meat was already cooked. Shredded the roast, and placed in a skillet with spices, onion & chile peppers (don't drain). Heated it up and added the flour. My roast was so darn fatty that I didn't really need much liquid. Cooked & stirred a few more minutes. Added sour cream & cheese and stirred until melted. Placed mixture in CORN tortillas. (They really are better - just heat them up before you try to roll them.) Baked as directed but topped with a can of enchilada sauce (can't imagine enchiladas without sauce) and more cheese. YUM!

Mrs. Sigg's Fresh Pumpkin Pie

REALLY like this recipe. Never cooked an actual pumpkin before. It was nice to show the kids that pumpkins are used for more than carving and pie doesn't have to come from a can. I used a refrigerated pie crust - I know I cheat but it was still good. And that filling... I thought it was better than that recipe on the can. But the pie looks the same as the standard - so you can fool the people that have only had the Libby's version and won't try anything new. (Can't stand those people - but every family has one I guess.) The pumpkin and spice flavors blended nicely and the brown sugar gave it a little something extra I think. Try it. It sounds time consuming but how hard is it to slice open a pumpkin and toss it in the oven? Let it cool slightly and mash it like you would potatoes (w/o butter of course!). EASY!

Pumpkin Cookies I

Yummy use of leftover pumpkin! To those of you who thought the butterscotch chips made the cookies too sweet - PUHLEEZE - IT'S A COOKIE!! It's supposed to be sweet. You people sure must like bland, dry, boring cookies. This cookie is moist and tasty. I thought that the chips made the cookies better. Anyway, followed the recipe exactly with the exception of using fresh pumpkin instead of canned. I thought the recipe did not need tweaking and I was a little skeptical when I there was not an egg. But I guess the cookie would be to cakey with all that pumpkin AND an egg.

Pumpkin Bread IV

Followed recipe exactly with the exception of using fresh cooked pumpkin instead of canned. I'm sure it would be good w/canned as well. This bread held together nicely when sliced. I just hate it when quick bread crumbles when you slice it! The family loved the first loaf and I froze the rest. Looking forward to making another batch!

Jayme's Sweet Summer Berry Dessert

This was delicious and simple to make.Followed the recipe exactly. Took it to a pot luck last week and didn't bring home any. Not sure where people find 5 oz cans of sweetened condensed milk though. Had to buy the 14 oz can and measure out 5 oz. Now I have to find a use for the rest - guess I could make more of this!! MMMM

Rhubarb Cake II

Excellent recipe. I too have fooled my rhubarb hating husband with it! I usually use a white cake mix and strawberry gelatin though. And I always top it with cool whip. Yum.

Tiramisu Toffee Dessert

I love this dessert. Very quick and easy. It's hard for me to make a traditional tiramisu because, in this rural area, packaged ladyfingers are hard to come by. And I only find mascarpone occasionally. Once I made it with angel food cake - also delicious.

Chocolate Chip Orange Zucchini Bread

Made this last summer (exactly as written!) and froze the loaves. Just pulled out of the freezer yesterday - freezes beautifully btw. Don't skip the orange peel. It makes the bread very flavorful and uniquely delicious. I will definitely make again (exactly as written) with this year's zucchini. But I won't wait 8 months to try it. It's just too yummy! ;)

Chocolate Ganache

I was bummed when I ran out of powdered sugar for frosting. Relieved when I found this recipe. In heaven, when I tasted it. Just used good ol' Nestle chocolate chips and it was delicious.

Chocolate Peanut Butter Bars IV

This is exactly the recipe that I remember from my childhood. I'm so glad I found it. A little sweeter than I remember but - oh so good! Will be making these for the holidays. Maybe they'd be good cut into squares and then dipped into chocolate - like a candy. Hmmm.

Spinach Lasagna I

This is a good recipe but I had to make 2 changes out of necessity. Instead of the tomato sauce I used a can of diced tomatos - italian style and stirred that into a little spaghetti sauce. I also omitted the tofu - husband not a fan. Great way to get veggies into a kid's diet, though.

Bacon Cheddar Chive Muffins

Made these for dinner tonight with one adjustment. Swapped sour cream for the mushroom soup. Just couldn't figure out what I would do with the rest of the can! They turned out great but I wouldn't call them muffins. They're more like a biscuit - but a pretty tasty one.

Grandma Ople's Apple Pie

Wow. This apple pie is as good as the recipe was intriguing. Pouring the mixture through the lattice crust seems to give the crust a caramel flavor which we loved. Definitely a keeper.
