Chickpea and Couscous Delight

While the recipe was OK and probably a good picnic food, there just wasn't enough flavor for our liking. I made it 2 times, the first time with chicken broth, the second without. Definately use the chicken broth.

Santa's Chocolate Thumbprint Cookies

These tasted OK right after we cooked them. However, I ended up waiting about 2 days before I got to have another and they were amazing then! So, make them a day or 2 ahead of when you need them. We put the cherry on ours and they looked cute and tasted wonderful.

Whipped Carrots and Parsnips

I had never had parsnips before so I wasn't sure what to expect. The dish was quite a bit sweeter than I expected. It was really good, but not what I was expecting. I think I may add onions and other spices next time. My biggest complaint was the smell of the parsnips as they were cooking.

Holly Christmas Cookies

While these do taste pretty good, I didn't see anyway to make a wreath. We ended up just making a circle (or as close as possible) and added red m&ms. I will make some more, but won't bother trying to do a wreath.

Amish Breakfast Casserole

Everyone enjoyed this casserole. I followed some of the other's advice and cut the bacon first. I found it took a long time to get crispy that way though, atleast for me. Next time maybe I will cook the bacon ahead of time to give it time to cool before crumbling. I also put the hashbrowns in the bottom first then put the mixture on top. I think I may actually prefer it mixed in though, as the recipe states. I only gave it 4 stars b/c I would like a bit more flavor. Perhaps some peppers added would do that. Otherwise a good easy and relatively quick recipe.

Roasted Vegetable Lasagna

This was good. I added a lot more veggies and tripled the recipe, ate one, froze one and brought one to a vegetarian friend who just had a baby. She loved it. The veggies I had in ours was spinach, peppers, onionm, carrots, cabbage, zuchinni, yellow squash, eggplant and mushrooms.

Grandma Minnie's Old Fashioned Sugar Cookies

Wonderful taste, texture and time! These were great for cutouts, were quick to make and easy to decorate. They taste great as well. This is our only sugar cookie recipe now. Take note though- we don't get anywhere near 6 dozen cookies. If we were doing small circle cooies, maybe 3 dozen.
