Stir-Fry Spinach Salad

Reviewed: Dec. 8, 2008
Loved the concept of this recipe. I added a handful of sliced mushrooms. I only added the cherry tomatoes at the end. I mixed the pineapple, along with some mandarain oranges, into the stir fry mixture right before serving. The sauce is great and I"ll use it in other stir fry recipes too.

Southern Living Magazine's Chicken-Fried Steak

Reviewed: Oct. 29, 2008
Off and on, I've tried about four other recipes for chicken-fried steak. I'm glad I finally found this one...it's the best. And I've never made gravy before, but this one was so easy. Keep stirring and keep patient and it will come together.

Kitty Litter Cake

Reviewed: Oct. 22, 2008
I didn't eat it...made it for hubby to take to work for Halloween gag. But he reported that they liked it! I did one spice cake, one french vanilla and one butter golden. I did large crumbles of each cake in a large foil disposable pan. Since I made an extra cake, I used 2 puddings. I crumbled two fullsize butterfinger bars and did a light light layer of tub buttercream frosting on top just to add some flavor. I had some Little Debbie brownies on hand anyway, so I warmed those in my hands for a few seconds and then formed them into the poo. It really is a rare delight to giggle while working in the kitchen, lots of fun making this!

Kielbasa and Veggies

Reviewed: Jul. 31, 2008
I used Healthy Choice Turkey kielbasa. I used hash brown diced potatoes w/peppers and onions. We don't like brocolli and caulfiflower and such, so I used a frozen bag of black eyed peas, some mini corn on cob, frozen bag of peas/carrots and sliced some zucchini. Practically a complete meal in itself, just served with some bread.

Chicken Marsala

Reviewed: Jul. 31, 2008
Looked just like the pic, the breading stayed on perfectly. I like that you can work on your side while the chicken is simmering stovetop. Above-average weeknight meal. Thanks for recipe!

Fruit Cocktail Cake

Reviewed: Jul. 24, 2008
Oh, wow. I loved this one. It's the "pecan pie" of cakes, for sure. Ooey gooey richness, a lil goes a long way. Tasted just as good a couple days later. I didn't even use the coconut/walnuts due to preference and it was just great. I will definetly make this for a potluck.

Famous Butter Chicken

Reviewed: Jul. 24, 2008
Very tasty! I swapped garlic powder for the garlic salt, added a little lemon pepper to the crackers. One sleeve of Ritz crackers was just perfect. I like that you could dress up or down this chicken just by switching up your sides.

Salsa Red Beans N Rice

Reviewed: Jul. 24, 2008
I halved it and used nearly the whole can of kidney beans, cause what else are you going to do with them? It was really good, still made a ton though!

Cashew Chicken Wraps

Reviewed: Jul. 17, 2008
I cheated, as I was making this as a quick dinner, and used 3 cans of chicken instead of fresh. It was probably just as good! Tasty recipe. Thanks!

Super Sausage Gravy

Reviewed: Jul. 15, 2008
My husband said this was the best sausage gravy he's ever had. And I even drained the sausage and rinsed the greasy pan before making the gravy. I used 3 cups milk, great ratio of sausage to liquid. Oh, and I used Jimmy Dean Country Mild sausage as it was on sale. Sorry Bob Evans!

J.P.'s Big Daddy Biscuits

Reviewed: Jul. 15, 2008
My 3 year old helped me make these. So easy! I had all the ingredients already. I baked mine (my cutter made 12) at 400 for 10 minutes. Everytime I make the canned biscuits they burn terribly on the bottom. These didn't, I was quite pleased.

Giant Ding Dong Cake

This was just great. Delicious to eat, great conversation piece, too! I made in two 9 inch circle layer pans and spread the filling between. Stored in fridge overnite. Will make again and again (for a crowd).

This was a good recipe. I like that I had everything on hand but the fresh chicken :)

Spinach and Strawberry Salad

Reviewed: Jun. 3, 2008
I kept the dressing in a cruet so that we could pour what we wanted on our salad , and to prevent sogginess. I added slivered almonds. This was really good and company-worthy!

I mixed baby spinach with iceberg, and added cherry tomatoes, egg, cucumber. Used a LOT LESS peas than called for.

Easy to make, easy to bake, mine didn't come out as "dense" as I'd have preferred though.

Pork with Peach and Black Bean Salsa

Reviewed: May 21, 2008
I was careful not to add any excess cornmeal, just what adhered to the meat...so I didn't have a problem with the cornmeal turning the liquid soupy. This was a good dish for something different :)

Cheesy Italian Tortellini

Reviewed: May 19, 2008
I don't make pasta often, but my husband doesn't care for lasagna, and I don't care to eat spaghetti everytime, so this was a really good change! Used spaghetti sauce, doctored up with the usual Italian spices. I have a hard time finding bulk Italian sausage at my stores, so I bought Johnsonville Italian sausages and pushed out of the casings.

OREO® and Fudge Ice Cream Cake

Reviewed: Mar. 24, 2008
I had to "surrender" an ice cream sandwich from the box to my daughter, so I was then left with 11. Easy enough...I just spread the entire fudge/whip topping layer between two layers of five sandwiches. I put the extra sandwich in the freezer for my daughter to have another time. It was a very good dessert, an upgrade from plain ice cream.

Brooke's Best Bombshell Brownies

Did not meet my expectations after reading the number of great reviews. I prefer to do my baking from scratch generally, but I will stick to the boxed supreme brownie mixes from now on.
