This looks delicious and I plan on making it for dinner tomorrow, but I do have a question. When people talk about making more than one and freezing it, do you assemble it completely and freeze it without cooking first or do you cook it and freeze and then just heat it up when you want to eat it? I assume in either case you would cook the meat first. I guess I am just concerned about the tortillas getting soggy and it not tasting great after being thawed. Can anyone give me some direction on that? I would like to make two in round pans and then freeze one for a later meal. THANKS!
