12-Hour Salad

I make a salad very much like this ALL the time because it is super tasty and looks good for company. My version includes only 1 cup of celery, and replaces the red onion with 8 scallions, but also adds a couple of chopped hard-boiled eggs and a 6oz can of sliced water chestnuts (drained). I've also never noticed any advantage to letting the salad sit for 12 hours before being served... although the leftovers are great, serving fresh is just as good. I am sticking with my variation of this layered salad, and I really hope that others stumbling across this recipe try them too.

Coconut Cream Pie

I added an extra half cup of coconut as other reviewers seemed to have liked more in their pie, but next time I will only add one cup as directed; I felt that the addition made the texture of the filling too thick and chewy, but the taste was still good. Otherwise, I used a graham cracker crust and topped with lots of whipped cream. Will definitely make again, but without the extra coconut.

Big Soft Ginger Cookies

I tried these with whole wheat flour (all I had on hand), and there is no way you could tell in the finished product. I think the only difference it made to the cookie was that it added an extra bit of texture, which was nice.

Maraschino Party Cake

I only gave this recipe four stars because I changed it a bit, but the result was great. First, I halved the cake recipe. With an elextric beater, I blended the margarine (the shortening) and sugar, then blended in the eggs, cherry juice, and milk, then threw in the flour, baking powder, and salt, and blended the whole thing. I chopped up a dosen cherries and mixed them in (and omitted the nuts). I poured the batter into a 9x9 square baking pan lined with wax paper and put it in the 350F oven. It only needed 20 minutes to bake before a toothpick came out clean. Cut into squares, these are like Cherry Sponge Cake Bars. They are sweet enough on their own and do not require frosting. Next time I would consider increasing the amount of cherry juice and chopped cherries.

Classic Bran Muffins

These were pretty good, and I like that they contain so much wheat bran to flour. They are, however, a bit on the dry and crumbly side though, and I followed the recipe exactly. I will try these again, but I'll throw in a couple bananas and see if that moistens them up at all.

Mexican Rice III

I skip the chicken broth (since the chicken bouillon cube is already in there), and toss in 1 'bunch' of cilantro regardless of the size it comes in. Leftovers are perfect generously added into a scrambled egg mixture and dressed with cheddar cheese in a tortilla shell served with salsa for breakfast. I hate to say it, but you won't miss the sausage.

Chickpea Curry

It was good, but didn't have an outstanding flavour. I rinsed and drained my garbanzo beans (always!), and added a can of diced tomatoes. I will try this recipe again though, but tinker with the spicing.
