This was great and very easy. The day before I cooked this soup, I made home made salsa. Since my salsa already had onions and cilantro, I omitted the onion that was called for in this recipe. I also had some left over Mexican rice that I threw in towards the end of cooking (just long enough to heat) as well as some canned corn. Very tasty!!

Bulgogi (Korean Barbecued Beef)

This was a very good and fairly quick meal to prepare. I made a couple of changes to the recipe. I added some sliced bell pepper to my mix of meat and veggies. I also wanted a little bit of heat so I added about 1 teaspoon of hot chili paste.

Penne Pasta with Spinach and Bacon

Giving it a 4 because I did make modifications to the recipe based on other member's reviews. Here are the changes I made... Cut bacon into pieces and fried in the pan. No oil was required. Cooked the bacon until crisp and removed from pan and allowed to drain on paper towels. I removed most of the oil from the pan and used the rest to cook some chopped onions and garlic. Once the onions are garlic carmelized I added a large can of whole tomatoes with basil. I crushed the tomatoes in the pan to create a chunky sauce. I then added my whole leaf spinach and allowed to cook and wilt in the sauce. Finally I added the bacon back to the mixture and cooked a few minutes longer. I served over the penne pasta and topped with grated parmesean cheese. It was a hit with the boyfriend and I will definatley be making this again! Great easy pasta recipe!

Bacon Wrapped Smokies

These are soooooo good. Now I'm stuck bringing them to EVERY function I attend. You might try making these on a grated roasting pan so the drippings can fall below. If not, you will have a dried fatty mess in about 40 minutes. But they don't usually last that long!

Super-Delicious Zuppa Toscana

This is delicious and BETTER than the restaurants because you can load it up with all the goodies. I use Kale instead of spinach. Kale stays some what crunchy in the soup which I like. Everyone I have made this for just goes crazy for it.

Easy Sugar Cookies

These were soooo easy!! I read some other reviews and heard there might be an issue with the temperature of the butter so I decided to put the butter in the microwave. Well, I went a little overboard and it ended up completely melting. Not to worry though since my cookies still turned out great. I cooked for about 9 minutes, let cool, then brushed with a light frosting of powdered sugar, butter and milk. I topped them off with red sprinkles and they were perfect.

Chewy Chocolate Chip Oatmeal Cookies
