Turkey Sloppy Joes

I'm always at a loss what to do with ground turkey and these were a great solution. They were much more spicy than I would have imagined although I might have been a bit too generous with the pepper flakes. My husband made a face when I said I was using turkey instead of beef for sloppy joes, but he really liked them. I will make them again!

Fresh Spring Rolls With Thai Dipping Sauce

These were so fast and easy to make. Great for a quick, healthy dinner. I had a little trouble finding rice spring roll wrappers but did find them in the oriental food area of my Jewel Foods. I was surprised to see the raw wraps look like they last a long time. Mine were a bit too big and hard to eat. Cilantro makes these taste so fresh! I used store bought peanut and plum sauces.

Summer Soup of Butternut and Corn

The corn adds a nice touch to this soup. I used milk instead of the yogurt and it was still very nice. I don't like to peel squash so I just baked it first then scooped it out.

Lloyd's Healthy Chicken Zoopa

I increased this recipe to 12 servings for a large group. It was a big hit. My variation was to put in about a cup and a half of cooked brown rice instead of noodles. I was hesitant about adding the raw chicken at the end but it worked out great.
