Cathy's Banana Bread

Reviewed: Dec. 3, 2007
This makes an excellent batch of 22-24 standard sized banana muffins. At 350 degrees, mine were beautifully browned all around but not burned in just under 25 minutes.

Garlic Cheese Flatbread

Reviewed: Nov. 15, 2007
I worried about the review which called this a 'sticky mess from start to finish', and they were certainly right. But I just kept adding more flour until it wasn't sticky and figured at worst we'd just end up pitching it. But to our surprise it was quick, easy and delicious. My 5 yr old could have eaten the whole thing. We cut it in strips and dipped in spaghetti sauce...yum! Thanks!

Fabulously Sweet Pear Cake

Reviewed: Sep. 30, 2007
I followed lots of advice from other reviewers: no pecans, 2/3 cup smart balance oil, and a powdered sugar & milk frosting (with some mulling spice sprinkled in), made in 2 8" cake pans (cooked FAST in 30 minutes). It's true it does not have a lot of pear taste, but it is still a nice caramel color and is super duper moist and flavorful in its own way. My daughters thought it was made with bananas. They both said it was "awesome". Thank you, we'll definitely make this nice autumn cake again.

Easy Slow Cooker French Dip

Reviewed: Aug. 8, 2006
I've made this twice and my roast does not get tender at all, certainly not enough to shred it. The sauce tastes wonderful, but I guess I suggest using a top quality roast.

Easy Chicken Enchiladas

Reviewed: Aug. 8, 2006
Finding an enchilada recipe that uses beans and does not use canned enchilada sauce is hard to find. This one is creamy and delicious, I've made it several times.

Tanya's Snickerdoodles

Reviewed: Mar. 4, 2006
Very soft and tasty though I omitted the almond extract. Cooking time was more like 12 min. My only complaint was that mine did not flatten out much during baking; more like 'lump cookies'. But delicious! Kids loved.

French Toast Souffle

Reviewed: Sep. 21, 2002
This was awesome. I used about 5 very large plain bagels cut into cubes instead of bread. My theory being it's much less soggy as bagels have more crust to them. YUM! I forgot to add the eggs one at time, oops! But it turned out fine. Also used 6 large eggs instead of 10 small. Thanks, I'll make French Bagel Souffle again soon!

Haroset for Passover

Reviewed: Apr. 1, 2002
This is a basic, very good haroset recipe. I split the batch in half and used apple/grape juice instead of wine with half and it was perfect for the kids. Thanks!

Famous Butter Chicken

Reviewed: Feb. 27, 2002
This was good, very moist result. This might be better used to make chicken tenders/fingers.

Mexican Turkey Stuffed Shells

Reviewed: Feb. 27, 2002
This was mediocre. To save oven time I boiled the shells and cooked the turkey first, then assembled and baked for 30 minutes, using only one can of sauce. It turned out fine but the taste was a little odd. Someone's recipe for "Taco's in Pasta Shells" is similar, but somehow better.

Virginia Apple Pudding

Reviewed: Feb. 24, 2002
This was okay and very easy, but why pour the apples in the middle? Mine stayed there! I'll stir it next time to even out the apples.

Judy's Strawberry Pretzel Salad

Reviewed: Jul. 27, 2001
Anyone will love this. I used 1/3 less fat cream cheese and it was great. I also cut down the sugar. You must used frozen strawberries to thicken the jello but then I supplemented with chopped fresh strawberries on top it it turned out great. Excellent make-ahead dessert.

Ground Turkey Casserole

Reviewed: Jul. 27, 2001
This is so tasty. My husband, who is casserole-phobic even enjoys it. The name doesn't do it justice, it's really yummy, serves a lot of people and my picky two year old even eats it. Thanks!

Chocolate Chip Cookie Ice Cream Cake

Reviewed: Jul. 27, 2001
This is great but the instructions need modification, especially for a pie pan, which I used. You need 1/4 to 1/3 less of all ingredients or it gets too tall and runs over, looks awful. Nicely contained, I used thawed Oreo ice cream on on the bottom layer and Chips Ahoy ice cream as the scoops on top. YUM! Then skip the whip cream and cherries, just drizzle warmed fudge topping randomly on top before you freeze it for 4 hours. It all hardens nicely that way and there's no "before serving" instructions necessary. Plus it looks awesome. I made this for a b-day party for a two year old and all kids and adults loved it. Everyone said it looked like it was professionaly done. Served 12 easily.

Tacos in Pasta Shells

Reviewed: Jan. 6, 2001
Suggestions: I used double the taco sauce. Also it seems very important to soften the cream cheese before adding it to the ground beef. It was very yummy and kids will love it. My daughter enjoyed helping me stuff the shells, this pasta shape is great for kids to work with.

Excellent, served for guests and everyone loved it, even the picky children. Takes time to simmer but the sauce thickens perfectly and tastes great. Thank you!
