Wild Rice Chicken Bake

Rice mixture was VERY good -- will make it again, with or without the water chestnuts (didn't have them on hand, and rice was still awesome). I seasoned the chicken differently -- used garlic powder instead of papirika -- and it was a nice blend of flavors. I will certainly make the rice again!!

Quick Chicken Soup

For a quick soup, this was awesome. I didn't have much on hand, but wanted to make chicken soup for my sick boyfriend. This did it! It was a very, very helpful start. I ended up using dill weed instead of celery seed (it's only what I had), substituting a teaspoon of onion powder for the chopped, and adding a cup of rotini pasta to the mix after I took out the chicken. I also added a cup of frozen green beans at the end to give it some color. It was amazingly easy, totally hit the spot, and Dan loved it. Highly recommended!

Brown Rice and Black Bean Casserole

This was delicious! I'm giving it five stars based on how good it would be even without my changes! Omitted the mushrooms and carrots (didn't have any), chicken broth instead of veggie (what I had), probably doubled the cumin and used chili powder instead of the peppers (I'm a hot-spice wimp), and added a can of (well-drained) petite diced tomatoes. I also halved the cheese -- 1/2 C mexican blend mixed in, then maybe 1/2 C on top -- to watch my middle! (If anyone else tries with tomatoes, I made sure to spoon off the 1/2 C or so of liquid that they released. It would have been soggy otherwise!) My boyfriend LOVED IT, and I will make it again and again! The best part is -- only $.60 a serving!!!

Italian Dressing Mix

Edit: I have used this time and time again. It is AWESOME! My husband loves it. I make it with balsamic vinegar and olive oil and it goes on absolutely everything. Thank you, thank you! First Impression: What a great mix! I used balsamic vinegar and olive oil and used this for a grilled chicken marinade -- it came out GREAT. Can't wait to use this on a salad.

Apple Spice Rice

This rice was AWESOME. My boyfriend and I both loved it. I will be making this again and again! I used brown rice, and since the bag called for 2C liquid, I used a whole 16-oz can of chicken broth. I also didn't have an onion so I subbed 1T onion powder. My kitchen smelled so good.

Black Bean Huevos Rancheros

This was excellent! My fiancé has been begging me to make huevos rancheros for him, and this came out just like he hoped it would! I did use store-bought salsa, though, and scrambled my eggs with cumin and cilantro instead of frying them, which gave the dish some extra flavor. Used chili powder (maybe 1 T?) in the beans instead of the chilies (it was all we had), and they were great. Thanks for an awesome recipe!

John's Broccoli and Ziti Casserole

This is my go-to "it's easy after work" recipe. Only change is that I saute the broccoli in about 1/4 cup olive oil, and add the remaining 1/4 cup as I'm mixing everything together. (Sometimes I need more, sometimes not so much.) I frequently saute a diced chicken breast or two with the broccoli, or grill some chicken beforehand and throw it in. Thanks for a great staple!

Hot Spiked Cider

Ooooh, this was YUMMY! Exactly the flavor I was looking for in a spiked cider. I didn't change a single thing, except that I accidentally forgot the butter at the end, and then decided it was delicious enough without! This is wicked-easy for how good it is, and works great either in on the stovetop or in a slow-cooker. I will be making it for parties for YEARS to come!

Lentil Chili

Pretty good! I added a lot more cumin, more chili powder, and a large can of red beans as well. It cooked for almost an hour, which I expected. My husband thought it was a little bland when it was ready, so we ended up adding some extra garlic powder and onion powder and a good deal more pepper. This made a TON though, which is great. We have leftovers for another night this week, as well as half of the whole batch in the freezer!

Carrot Broccoli Casserole

DELICIOUS! This was an excellent side dish and I can't wait to make it again. I threw in some sliced mushrooms to the carrot mix as I was sauteing the onions and used celery seed instead of celery (since I didn't have any on hand.) The leftovers were absolutely gobbled up! Thanks for a great recipe!

Apple Walnut Pound Cake

This was AWESOME. My husband ate the entire thing! I used three apples, upped the milk a little, and added some cinnamon to the batter. (Thanks, Jillian!) Excellent recipe! This cooked for much longer than I expected, though (probably an extra 15 min), but that's probably because of the extra apples. Oh, also, I baked this in an 8x8 glass dish. I didn't think it would fit in a loaf pan! Delicious, though. Absolutely a keeper!

Ten Minute Enchilada Sauce

OMG this is my go-to enchilada sauce! I've abandoned my mom's time-consuming blender process for this SUPER FAST, SUPER YUM recipe. It is the BEST! I use butter instead of oil, and instead of water I use a 15-oz can of beef broth. But FIVE STARS for a fantastic enchilada sauce! This is the only enchilada sauce I make anymore. Thank you!

Scalloped Potatoes and Onions

I'd like to say two things first: 1) I always change recipes, and 2) I really don't like mayo. That said, I did not change a THING in this recipe and it tasted AMAZING. This is now THE scalloped potato recipe for me. It's fantastic! (My potatoes were pretty thin, though, so it only took an hour at 350.) Thanks so much!

Crustless Cheese Quiche

I am in love with how easy this is. Five stars for that! Excellent, excellent base. Four stars for taste as written. Alone I thought it would be rather bland, so I added some mushrooms, did half feta and half cheddar, omitted the butter as others did, and added onion and garlic powder to the egg mixture. Delicious!

Ham Potato Puffs

AWESOME! Loved this so much. Used the last of my leftover Christmas goose and my mashed potato/turnip mixture. Added a little onion powder and thyme as well, and it came out fantastic. Husband loved it! Served with steamed broccoli and goose gravy. Thank you! This is exactly what I was looking for.

Depression Cake I

Came out very good. Surprisingly rich. Next time I might cut down on the sugar, though, because this was much sweeter than I expected. I halved the recipe and baked it in an 8x8 glass pan for just under 35 minutes and it worked well. Thanks for a great dairy-free recipe!
