Black Beans and Pork Chops

Wow! Yummy! The chops turned out much more tender than they usually do for me. This recipe was easy to make and really delicious! I used thin cut chops, seasoned them first with pepper, cumin, onion and garlic powder, and Mrs Dash Fiesta Lime. I prepared my own salsa (search Fresh Tomato Salsa on this site) and added a little bit of El Pato sauce for some heat. Served it with mexican style rice.

Three Cheese Manicotti

Very good! I only cooked the pasta for 4 minutes so they would be easier to stuff. I also added a little garlic power, italian seasoning, and a dash of nutmeg to the cheese mixture. Then I sauted a little fresh onion and garlic to add to the sauce.

Asparagus with Junk

This was good but I think I prefer my asparagus simpler, roasted with a little provolone melted on it if anything. I think this recipe is probably pretty good for people who don't like asparagus that much or kids maybe. But for me the "junk" took too much away from the veggie itself, but then again, I am an asparagus lover. I am giving it four stars though because I did enjoy it and so did my husband.

Donut Muffins

Wow these are so good! And very easy to make. I did only used 1/2 tsp nutmeg and added 1/4 tsp cinnamon to the batter. I don't have a mini-muffin pan so I used a normal sized muffin pan, filled each cup about 1/3 of the way which made 12 almost-mini-muffins. To cut out a lot of calories I tossed them with the cinnamon and sugar in a large ziplock while they were warm out of the oven. They were coated perfectly and turned out delicious!

Best Tuna Casserole

I sauted the onions first, and mixed all of the cheese into the casserole instead of adding some on top. Because of the reviews that said it was too dry, I added 1 1/2 cups of milk and 1/2 cup sour cream, and a bit of pepper too. I used crushed ritz and melted butter for the topping istead of chips because I didn't have any.

Stephen's Chocolate Chip Cookies

This is the perfect chocolate chip cookie in my book, absolutely perfect. I followed the recipe exactly except I had to use only the nuts and chocolate chips I had on hand (pecans, walnuts, semi-sweet chips). I made these for my husband hoping I wouldn't like them (I am trying to watch my calories) since I don't like nuts, but unfortunately one little taste was all it took.

Easy Deviled Chicken

Very good and easy. I doubled the mayo and butter, tripled the mustard (dijon), and didn't use salt and pepper (the stuffing mix was flavorful enough without it). Also scaled the cooking time waaay back to around 45 minutes.

Lime Chicken Soft Tacos

Okay I am giving the original recipe 4 stars, but when I made it again and made a few changes, it became a 5 star recipe! Changes I made were 1- No oregano, used fresh cilantro instead 2- Doubled the lime juice 3- Sauted the garlic along with the chicken 4- Instead of monterey jack, I used grated cotija cheese which is delicious on tacos! 5- Not necessary but I fried my tortillas in vegetable oil and made hard shells instead of having them soft. The recipe is delicous both ways though.

Sugar 'n' Spice Nuts

Dangerously good. I am going to make these for Christmas gifts this year so I did a mini test batch today and WOW. I don't really like nuts myself but I could eat these all day. I followed the recipe very closely, the only changes I made were A) I am just using walnuts and pecans and B) I used a dry grated orange peel from the spice aisle instead of fresh grated, and only used half the called for amount. I think these will make the perfect homemade Christmas gift.

Farfalle Festival

Very good! I did find the recommended porportions of pasta and alfredo sauce to be quite off but it was an easy fix. Serving just the two of us, I halved the pasta and doubled the alfredo. I also used fresh garlic and sauted it with the onion in the butter, then proceeded as stated.

Pumpkin Chocolate Chip Muffins

Very good! I made the recipe mostly as stated, just substituted brown sugar for white, increased the spices about 50% and baked at 375 for 20 minutes. Also did the trick from another reviewer of moistening the chocolate chips and throwing them in with the dry mixture to keep them from sinking to the bottom.

Hot 'n' Spicy Buffalo Chicken Salad

This recipe is SO good and easy! It is great to eat as a salad, but also delicious in wraps, pita bread, and my newest discovery- it makes an amazing pizza topping (minus the lettuce). I use the dressing as the pizza sauce. Top it with the chicken cooked exactly as stated, then add some mozzarella (and more blue cheese if you want), and voila! This has become our absolute favorite pizza. *note: I use the Quick and Easy Pizza Crust recipe from this site.

Chantal's New York Cheesecake

My husband is a big fan of the deli style cheesecake, but I had never attempted to make one before because of how difficult I heard they were. For our sixth wedding anniversary I decided to give it a shot. Using 'Chantal's New York Cheesecake' recipe, along with following some tips from the reviewers, my first cheesecake turned out absolutely amazing! The changes I made to the ingredients were to cut the flour in half and to use a different crust recipe ('Graham Cracker Crust I' from this site) that included more butter, plus sugar and cinnamon. Other than that, the tips I picked up were to be careful not to overmix the batter and make sure all the ingredients were at room temperature. I also set a pan of boiling water on the rack beneath the cheesecake in the oven. The result was heavenly and my husband can't wait for me to make this again!

Orzo with Parmesan and Basil

My husband and I love this recipe. It is a great side dish for any type of meat/poultry/fish. I don't always have basil on hand so a lot of times I just leave it out and it is great either way.

Garlic-Lemon Double Stuffed Chicken

This chicken is SO SO good. My husband and I both love it. Some other reviewers have said that the cream cheese was too overpowering but I used 1/3 less fat cream cheese and it was perfect. I use toothpicks to secure it to help keep the cheese in. I also like to cover chicken with foil for half of the baking time. Other than that, I follow the recipe exactly and serve it with white rice and broccoli or another veggie.

Baked Honey Mustard Chicken

The sauce turned out great but once cooked, the flavor didn't come through the chicken as well as I wanted. I think it definitely needs to be marinated, overnight if possible, in order for the chicken to really soak up the flavor. I spooned a little of the excess sauce over white rice and veggies and it was yummy.

Quick and Easy Pizza Crust

I've never made my own pizza crust before and wasn't too sure I could but I have used this recipe a few times now and I love it. I took one reviewer's suggestions and added a teaspoon of italian seasoning and 1/2 teaspoon onion powder to olive oil before mixing it in. I let it rest for about 20 minutes. I also added 1/2 teaspoon garlic powder to olive oil to brush onto the crust. Then I bake it for atleast 5 minutes before adding the toppings. Comes out great and either makes one thick crust pizza or two thin crusts.

Caramelized Onion and Gorgonzola Pizza

This is a very good pizza but definitely reduce the amount of gorgonzola. I reduce it by about half and substitute mozzarella for the other half. I also use the Quick and Easy Pizza Crust recipe from this site. Turns out amazing.

Pizza Carbonara

This pizza is awesome! Very flavorful. The only change I do is I use mozzarella instead of monterey jack and I make my own pizza crust using the Quick and Easy Pizza Crust recipe from this site. The two recipes combined make either one thick crust, heavier pizza, or two thin crusts.

Banana Crumb Muffins
