Cake Balls

these look and taste amazing!! definitely start by adding only half of the containier of frosting, and slowly add more if necessary- i found that using just a little more than half of the container was perfect to give the balls a more "cake-y" consistency (insteasd of too gooey). i waited for the cake to cool before crumbling and mixing, then refrigerated the formed balls for about 2 hours. i melted a bag of semi-sweet chocolate chips mixed with 2Tbs oil for dipping. then i drizzled melted white chocolate over the tops with a fork for a pretty design. i refrigerated them for a few more hours before serving- nobody believed i made them myself! definitely will make these for a company new years luncheon next week. This recipe is worth a try!!

Mini Sweet Potato Pies

WOOOOOW! these were so so so delish! sweet potato pie is my boyfriend's favorite, and this recipe blew him away- he couldn't believe i made it! ... a few changes i made: instead of usind mini muffin tins, i used regular sized silicone muffin bake pans. make sure if you're using silicone, you put the pans on a baking sheet for more even cooking.the recipe yielded 12 pies this way, and there was about a cup of filling left over. Instead of puree-ing the sweet potato mixture in a blender, i hand whisked the ingredients together, and it came out great! i will definitely make this again for thanksgiving celebrations tomorrow and this weekend! TRY IT, YOU WONT BE SORRY!!!

Potato Chips

i never ever would have thought i could make potato chips in the microwave! i was skeptical, but tried this recipe anyways - amazing! i admit, i burned a few batches, but the ones that worked tasted great! i put a piece of wax paper directly on the microwave turntable, sprayed with olive oil cooking spray, put down a single layer of potato, then sprayed again- i cannot say enough about how good these are! will definitely make again!

Chipotle Crusted Pork Tenderloin

modified this quite a bit, and it came out amazing! i marinated a tenderloin in mccormicks hickory bbq marinade (from a packet)for about 40min then coated it in this rub (decreased the chipotle a little) and then baked in the oven at 350 for about 45min. came out perfect!!

Alfredo Light

i was hesitant to try this after reading some reviews, but i made lots of changes, and it came out AMAZING- followed previous reviews and made a roux, still took a while to thicken (i ended up adding some extra flour to speed it up)- i added chunked chicken breast and it was delicious! could barely tell the difference from the full fat alfredo sauce! i will definitely make it again!

Golden Sweet Cornbread

Made some changes (hence only 4 stars). Did as others suggested and used 2 eggs instead of 1, used 1/2 Cup splenda, added 3Tbs. olive oil, and reduced baking powder to only 2tsp for less crumble. Used a glass baking dish, was done in 20 mins. Let it rest for a few minutes and thought it was delicious!! Was a great side to my turkey chili tonight!

Beer Bread I

this was amazing!! made this about 15min ago to serve with stew (which is almost done :] ) an the loaf is already half gone!! made with whole wheat flour, baking powder and salt to make it rise- added 1/3 cup splenda and a handful of cheddar cheese for moisture. i used sam adams oktoberfest as that was all i had in the fridge. pored 3 tbs melted butter w/ garlic powder over top before baking, as recommended. will definitely make again, we love it!!

Apple Delight

made this tonight, but not with apples... used 1 can blueberry and 1 can strawberry filling, and butter yellow cake mix. came out great, but VERY owerpoweringly sweet. i cant think of a way to cut out the sweetness of it... but its good served warm over vanilla ice cream. i'll probably make it again, maybe find some lower sugar content filling.

Awesome Honey Pecan Pork Chops

this was INCREDIBLE, after a little tweaking. i used 1 lb thin cut boneless pork loin, added seasoning salt and garlic onion spices to the flour (recipe does call for a little too much flour, but its ok if u adequately spice it and dont mind wasting a little...) browned it w 2tbs of butter- there wasnt anything left in the pan, so i added 2 more tbs butter, 1/3c chicken broth and some soy sauce as suggested to the honey and pecans. it was soooooo gooooood! definitely will make again!

Over the Top Nachos

awesome recipe! made it last night for myself and my boyfriend as auperbowl dinner- we loved it! i added green onions and used taco seasoning for the beef- sooooo good! i also made lots of layers, not just one- so each chip was as good as the next! definitely will make again.
