Italian Summer Squash Polenta Bake

Basic but delicious. You could do a number of things with different vegetables. I also made the polenta from scratch. I would recommend using less vegetables than required though, as I had far too many for this recipie.

Roasted and Curried Butternut Squash Soup

Very good, very tasty. All my guests loved it. And it was fairly simple to make. This is good Holiday soup.

Sweet Potato Pecan Pie

Really tasty and rich. Makes for a good and easy holiday pie. However, I would recommend using a deep dish crust. We had too much filling to put into a regular crust.
