Apple Strudel Muffins

I did add cinnamon to my batter mixture. Big hit with grade school crowd at our house and they were surprisingly moist for quite a few days aferwards too.

Death By Chocolate III

I made this for my 4th grade students and they all loved it. Easy to make and looks pretty too. I bought crushed Heath toffee bits in the baking aisle section rather than individual candy bars. Only complaint is it was a little "soupier" than I would have liked. I made it 1 1/2 days ahead so perhaps thats why.

Scalloped Potatoes and Onions

I took the advice of other reviewers and added garlic and extra pepper. I also use garlic and pepper with each layer rather than adding to the sauce. Put a sprinkling of parmesan on the top.

Chicken Fajita Marinade

We did shrimp and chicken but I only marinated the shrimp briefly to keep them from getting chewy. Yum, big hit with my 20 something kids. I used Corona and did use generous amounts of cumin and some chili powder bc we like some kick. These aren't a spicy variety but are flavorful none the less. Nice and tender. I also marinated the veggies in a seperate bag.

Too Much Chocolate Cake

Didn't taste like a box cake which was good. Drier than I expected. I drizzled chocolate over the top but felt it needed a bit more frosting or something to compete with the dryness

Shredded Beef Chimichangas

The crust never really crisped up for me, but the meat filling was good. We did have enough for leftovers later in the week and just served in soft flour tortillas and made it like a taco. I did it in the crock pot for convenience.

Slow Cooker Carnitas

I have never had carnitas in my life so don't know what they are supposed to taste like, but I added a can of adobo sauce bc we like stuff hot. We feasted on these for several days. Yum!!

Smooth Strawberry Soup

I used vanilla yogurt instead of sour cream per another posters recommendation. Made for Valentines Day tea party for kids and they all loved it. Didn't do the croutons so can't comment on that. If it was good with dreary winter strawberries imagine it will be awesome with summers fresh bounty.

Authentic Louisiana Red Beans and Rice

Changes I made bc that's what I had on hand--1 pkg smoked kilebasa for andouille and 2 cans red beans vs dry and red pepper instead of green. I also added 2 ham hocks for extra flavor and simmered for several hours. Family loved it. We had no leftovers and it fed 6. Def will put it into the rotation.

Sicilian Spaghetti

We loved this. I used Italian bread crumbs and our dinky town had no anchovies so I used about 1 inch of anchovy paste to serve 4 people. I did use about half the amount of bread crumbs the recipe called for and more olive oil based on previous reviewer suggestions. I cooked sliced chicken Italian sauages,red peppers and sugar snap peas on the side and mixed in with the pasta and topped with cheese. Even my picky eaters liked this. I serve some variation of chicken/veggie/pasta dish about once a week bc its one main dish and a way to get veggies in my kids so finding another way to have pasta was a real treat for us.

Terry's Favorite Easy Chicken Pie

I only used half the cream cheese based on other reviews. I added a lot of coarsely ground black pepper, tarragon and some lightly sauted celery, onions and mushrooms. I used frozen pie shells. Def a keeper to put into the rotation for fast easy dinner. Quite rich tasting.

Southern Peach Cobbler

I used fresh peaches which took quite a while. Did not have enough to feed our family of 5. family loved the crunchy crust on this cobbler. May try canned peaches next time to cut down on time to make. Not overly sweet which was nice for a change

Spinach and Feta Pita Bake

I didn't make it exactly since I didn't have all the ingredients. I have a ethnic grocery store nearby so I used some red pepper/eggplant pesto that I had on hand and bought some fresh pita bread for them also. Huge difference in taste from the pits you get at your local deli grocery section. I also only had romano cheese but that was fine taste wise. I was surprised that the feta taste wasn't as strong as I had hoped since its one of our fav cheeses but mention this that if you hate feta don't be put off because it was not an overpowering feta taste like you would expect. Next time I will put more spinach on and maybe omit the olive oil. I made half with the addition of sliced greek olives and diced green onions and everyone raved the ones with these were even better. Very visually appealing and would also make a great appetizer or a main meal. Always on the lookout for healthier fast cooking recipes and this one will go into the rotation. I did have to cook it about 15 minutes and turned heat up to 400 to crisp it up.
