Grandma's Lemon Meringue Pie

Reviewed: Jun. 28, 2014
Nice flavor. I am not a baker and had no problems w the meringue setting or the filling being too thin as others reviewers alluded to.

Creamy Pesto Shrimp

Reviewed: Jun. 5, 2014
Family loved it. Used half the butter suggested, much more black pepper, no shrimp as none on hand. Did use half Romano, half Parmesan, again bc what was on hand. Will def make again and probably use scallops instead of shrimp.

Slow Cooker Buffalo Chicken Sandwiches

Reviewed: Feb. 1, 2014
Easy recipe. Didn't taste too salty or spicy to us as others noted. Did add some garlic cloves. Kids liked it as well.

Turkey Wild Rice Soup II

Reviewed: Nov. 30, 2013
Used black rice bc I didn't have wild rice. My roux didn't come out as it usually does which is why the flavor was off to me.

Lemon Square Bars

Reviewed: Jul. 20, 2013
Everyone loved. If you really love super lemony favors, this is kind of on the mild side flavor wise, but the shortbread crust was yummy. Made exactly as written except added dash of salt to crust and some pulp and zest from 3 lemons to filling and powdered sugar dusting once cooked

Death By Chocolate III

Reviewed: Nov. 23, 2011
I made this for my 4th grade students and they all loved it. Easy to make and looks pretty too. I bought crushed Heath toffee bits in the baking aisle section rather than individual candy bars. Only complaint is it was a little "soupier" than I would have liked. I made it 1 1/2 days ahead so perhaps thats why.

Scalloped Potatoes and Onions

Reviewed: Sep. 4, 2011
I took the advice of other reviewers and added garlic and extra pepper. I also use garlic and pepper with each layer rather than adding to the sauce. Put a sprinkling of parmesan on the top.

Chicken Fajita Marinade

Reviewed: Aug. 28, 2011
We did shrimp and chicken but I only marinated the shrimp briefly to keep them from getting chewy. Yum, big hit with my 20 something kids. I used Corona and did use generous amounts of cumin and some chili powder bc we like some kick. These aren't a spicy variety but are flavorful none the less. Nice and tender. I also marinated the veggies in a seperate bag.

Mexican Pizza

Reviewed: Jul. 31, 2011
The topping was fine, but did not care for the rust at all!! Maybe a thinner crust bc it felt way too doughy for us

Too Much Chocolate Cake

Reviewed: Jul. 23, 2011
Didn't taste like a box cake which was good. Drier than I expected. I drizzled chocolate over the top but felt it needed a bit more frosting or something to compete with the dryness

Roquefort/Bleu Cheese Dressing

Reviewed: Jul. 8, 2011
Not bad, loved the garlic, but just average and not quite what I was looking for. A little on the thick side too.

Shredded Beef Chimichangas

Reviewed: Apr. 9, 2011
The crust never really crisped up for me, but the meat filling was good. We did have enough for leftovers later in the week and just served in soft flour tortillas and made it like a taco. I did it in the crock pot for convenience.

Slow Cooker Escalloped Chicken

Reviewed: Mar. 16, 2011
This (stuffing part) tasted ok, but the texture and appearance were just disgusting and the chicken breasts needed more flavor

Slow Cooker Carnitas

Reviewed: Feb. 22, 2011
I have never had carnitas in my life so don't know what they are supposed to taste like, but I added a can of adobo sauce bc we like stuff hot. We feasted on these for several days. Yum!!

Smooth Strawberry Soup

Reviewed: Feb. 13, 2011
I used vanilla yogurt instead of sour cream per another posters recommendation. Made for Valentines Day tea party for kids and they all loved it. Didn't do the croutons so can't comment on that. If it was good with dreary winter strawberries imagine it will be awesome with summers fresh bounty.

Slow Cooker Pulled Pork

Reviewed: Feb. 6, 2011
Nice tender and moist. I used a cheaper cut of meat and it was fine. Didn't taste the overbearing root beer flavor at all as mentioned in another review but was kind of bland. Not awful, not great either

Authentic Louisiana Red Beans and Rice

Reviewed: Dec. 6, 2010
Changes I made bc that's what I had on hand--1 pkg smoked kilebasa for andouille and 2 cans red beans vs dry and red pepper instead of green. I also added 2 ham hocks for extra flavor and simmered for several hours. Family loved it. We had no leftovers and it fed 6. Def will put it into the rotation.
