Bacon-Balsamic Deviled Eggs

Definitely the best deviled eggs ever. Zesty, flavorful, bacony goodness. I followed the recipe exactly, except used turkey bacon and reduced-fat mayo. ('Cuz that's how I roll, dawg.) Oh, and I did add a splash of milk to the yolk mixture to thin it a bit.

Home-Style Scalloped Potatoes

Perfect comfort food as is; just like Mom's. However, for my extra-special, Three Cheese version, I add (to the white sauce) a little minced garlic, nutmeg, and about 1/2 c each Jarlsberg, Parmesan and Asiago cheeses. I also use skim milk along with 1 can of 2% evaporated milk to total 5 cups.

Asian Lettuce Wraps

Fabulous. I tested out the recipe on my husband last night- it's now going on the menu for our party. I made it as written except used cooking spray instead of oil; and used EXtra lean beef. I'm thinking about eating the leftovers for breakfast right now.....

Washabinaros Chili

Awesome!! I was scared to make this for my football party, so I made a more standard "Texas chili" as well. This was the one that everyone kept going back for. The wasabi smells very strong when you first add it- I was having a hard time imagining how this mixture would end up tasing good. At the end of the cooking time, however, the flavors had mellowed and blended perfectly. Delicious!

Chicken Breast Cutlets with Artichokes and Capers

Greek Tzatziki

I did enjoy this recipe, but next time I will cut WAY back on the pepper. The pepper flavor was too strong for me, and I had to go back and add more of everything else to balance it out. I served this with pita bread and the "Summer Feta Burger with Cream Cheese Spread" burger patties from this site(in place of the cream cheese spread). Our friends were fighting over the leftovers!

Cadillac Pimento Cheese

Love this! I made it twice in one week. I use reduced-fat ingredients, including 2% milk sharp cheddar. The first time, I used sour cream in place of the cream cheese, and the second time I used part-skim ricotta. It was delicious both ways. Thanks for the great twist on an old favorite!

Pretty Picnic Salad

I really liked the flavors in this salad, it is very tasty and fresh. However, as written, it turned out way too oily for our taste. I had to add about 50% more veggies and then serve it on a large bed of lettuce. (Then we ate this as lunch several days in a row.... Yummy!) I would recommend not dumping all the dressing on at once the first time you make this- add half of it first, then more if needed. This would also be delicious without the cheese, for a heart-healthier version.

Killer Artichokes

Wow, that shallot butter is delish! I made this on a whim because I had 2 artichokes that needed to be used, and happened to have shallots too. My husband wasn't home, and I ended up eating two whole artichokes for dinner by myself. I don't really recommend that. But they sure tasted great at the time!

Tuna Piccata Pasta Salad

I love this recipe! The capers are a delicious twist. I doubled everything except the oil to cut back the fat and calories, and didn't miss it a bit. I also added chopped celery and red onion. (I can't wait to try this with smoked salmon in place of the tuna!) I will definitely be making this tuna salad on a regular basis. Edit: Tried this with smoked salmon and lots of red onion....Fantastic!! If you can splurge on the salmon, I highly recommend trying this.

Curry Chicken Salad

I made a large batch of this and ate it for lunch several days in a row. It was very good on bread with lettuce, tomato, and black pepper; and also very good in a wheat wrap with a little chopped fresh pineapple. I will be making this again.

Ginger Glazed Mahi Mahi

This has become a favorite of the whole family, including my 4 year old. I really think it is the best fish I have ever prepared at home. I usually serve it with a Thai Mint flavored rice and green beans sauteed with fresh garlic and olive oil.

Brie and Cranberry Pizza

This got raves at our wine and cheese party. I used the reduced fat crescent rolls (I know, I know. What's the point when you're then adding a half pound of brie...but it did reduce the trans fats at least!) I also used raspberry chipotle preserves- mmmmm! Sweet and spicy deliciousness!

No Name Orange Roughy

I made this with cod and shrimp because that's what I had on hand. I served with a greek chopped salad and hearty bread. My husband and friends loved it! I especially liked the shrimp so I will definitely do the same next time. (I added the shrimp when the fish was about halfway cooked since my filets were thick). I will also follow some of the others' suggestions to thicken the sauce a little more next time, but the flavor of this dish was outstanding. Definitely a keeper!

Slow-Cooker Chicken Tortilla Soup

Awesome! I used whole frozen chicken breasts (defrosted just enough to trim off the fat)and shredded them about one hour before serving. We topped each bowl with shredded colby-jack and store-bought chips. So easy! This will be in frequent rotation at our house during the winter.

Zesty Slow Cooker Chicken Barbecue

This has got to be the easiest meal I have ever prepared. It took about 2 minutes to throw the ingredients together before work. I actually used frozen boneless pork loin chops, then shredded them when done. I served on whole wheat rolls with pickles and onions. Delicious!!

Taco Lasagna

I made this for a casual dinner party and it was a hit. I made it as written except I used reduced-fat sour cream and cheese; it was still quite flavorful. I used a medium-heat salsa in the recipe; it was too spicy for the small kids but those of us who love a lot of heat needed to add some extra hot salsa on top. I also served with fresh guacamole for topping, YUM!! Based on all the great reviews, I went ahead and put together an extra casserole to freeze for later, and I'm so glad I did!

Sesame Tilapia

My husband and 4 year old son absolutely loved this. I liked it pretty well, but next time will try marinating overnight in hopes of a little more flavor. (I did marinate for about an hour.) I did not have italian seasoning so I used basil, and added some fresh ginger. I served it over garlic couscous, which was a good match, and with a side of sauteed spinach. I will make this again!
