Spicy Baked Sweet Potato Fries

Followed others responses... cut them relatively small, salt, pepper (lots of both), 1tbsp of olive oil and a sprayed baking sheet. 400 degrees, 25 mins, then 425 for 15 - pretty crispy, very delish, really easy!

Easy Lasagna II

love this recipe, it's become a staple in our home. Usually just do canned/jarred spaghetti sauce and if I don't feel like browning meat I just throw in some cut up spinach and make it veggie lasagna - I prefer rocatta cheese, as well, not a big fan of cottage cheese :) Deelish and VERY easy to make.

Lemon Snowballs Cookie

These didn't turn out "ball" like as I was expecting (guess I should look at the photos more closely huh??), and baking them directly on the pan is definitely required - I made the mistake of doing two trays on parchment paper and they were very underdone/soggy and I was so bummed! The flavor is great, though. I'll pay closer attention next time.

Raspberry and Almond Shortbread Thumbprints

Love these, I've wanted to find a shortbread/jam recipe for a few years and finally gave it a shot. I used a cherry/strawberry/raspberry blend for the jam filling and it was delish!

Crepes with Spinach, Bacon and Mushroom Filling

I think I got in a little over my culinary abilities with this recipe - and yet it still turned out AMAZING. The filling was the more involved part but it was worth the effort (and all of the dishes :) ). DELICIOUS! My husband was almost as impressed with it as I was! Great breakfast dish.

Stuffed Peppers with Turkey and Vegetables

Really liked this - but just added premade spaghetti sauce from a jar instead of diced tomatos/sauce. Also added corn (just because I love corn in these types of things!). Worked out deliciously and very easy to make.

Chicken Cordon Bleu II

Delicious!! My husband and I loved this meal, it was relatively easy to put together (I think I'll tie the chicken next time, toothpicks are kind of a pain). Didn't change a thing other than making a little extra sauce. We'll definitely have this again!

Easy Chicken Enchiladas

My husband and I *love* these enchiladas, it's a huge time saver with the already made chicken - and I usually just buy a sauce pack of red sauce to put below and over the top of the enchiladas. We like to add corn and sometimes red bell pepper. DELISH!!
