Fettuccine with Sweet Pepper-Cayenne Sauce

This pasta is delicious even without the parmesan cheese. I forgot to add it and didn't even realize it until much later b/c it tasted so good.

Spinach and Leek White Bean Soup

This was good but just a tiny bit bland. I added some red pepper flakes and a lot of salt. It could have used some more seasoning but not sure what exactly (lemon juice, perhaps). But overall, very good.

Scrambled Tofu

I added cumin, coriander, curry, and cayenne to this, which spiced it up nicely. I also drained the tomatos and next time I too, would use firm rather than silken tofu because it was a bit soupy. But this is a good easy recipe!

This recipe originally comes from Betty Crocker. I've been making it for years and it is delicious (and very, bery sweet. I often melt about 3 squares of chocolate for the top, since one isn't usually enough to cover the whole thing.
