Espinacas con Garbanzos (Spinach with Garbanzo Beans)
Like many, I made this with what I had on hand but varied little from the recipe. Spinach was frozen (thawed and drained) and I had a jar of minced garlic so I put in four rounded teaspoons for the four garlic cloves. (I do love garlic.) It was SOOO good. I've had it as both meals and side dishes, eating it up (as I'm the only one eating it). I not only will fix it again, I'm passing it on to my favorite friends whom I know will love it. And for those who doubt cumin with spinach? Get over it, it's great!! A+

Tilapia Scaloppine
Wowzers! This was a great change of pace for fish. My hubby and I loved the flavor of the sauce. Like another reviewer, I took the fish (I used Swai--it was great) out of the pan after the initial cooking and then reduced the sauce and returned the fish at the very end. I used ICBIN Butter light (to cut the fat a little) and added about a 1/2 c of water. The resulting sauce was still PLENTY tangy and I like tang! Very yummy. Hubby says the sauce would go well on most anything. Definitely will be making again.

Ricotta Stuffed Squash
YUMMY! I used 2 ( four halves) very large garden squash and then halved the other ingredients. Lightened it up a little by using LOWFAT ricotta, sauteing the onion, etc., in olive oil with just a tiny bit of I can't believe it's not butter. Partially cooked the squash in the microwave, then sprayed it with Parkay Butter spray. Used my Misto to spray olive oil on the pan I was going to bake them on. Added chopped, fresh garden basil to the spinach mixture. Had some leftover spaghetti sauce I'd made using garden tomatoes and turkey italian sausage that I put over the top before serving. Our plates were clean! Thanks.
