Mayonnaise Biscuits

Reviewed: Oct. 4, 2008
These are very good. Very light and fluffy. If the batter is runny or they don't rise, the batter has been mixed too much! I used a rubber spatula and gently folded ingredients till just combined.

Best Brownies

Reviewed: Jul. 28, 2009
These are so yummy. I doubled the recipe for a 13x9 pan, but only used 3 eggs and added almost a whole cup of the cocoa powder. Cooked them for 30 min. and did not frost them. Fudgy and delicious!

Sloppy Joes II

Reviewed: May 19, 2013
The first time I made this recipe I followed it exact, so the five star rating is for the original. That being said, I make these all the time and do a few things differently to simplify things. I use a whole onion and a whole green pepper for 3 reasons: no measuring, added nutrition, and it stretches the 1lb of meat a little further. I use more garlic pwd., less sugar, and sometimes djion mustard. These are definitly a family favorite!

Mexican Bean Salad

Reviewed: Jun. 29, 2010
Awesome salad. I cut the amount of the olive oil and red wine vinegar in half. Also used a slightly rounded TBS of sugar. We only ate 1/2 of the salad the first night, but that was fine because reviewers said it was even better the next day. They weren't kidding! Next day I wrapped some in a warm tortilla with a little sharp cheddar. Sooo good!! My idea of comfort food :)

Amy's Cilantro Cream Sauce

Reviewed: Jun. 4, 2013
This sauce is fantastic and a cinch to whip up. It has a delicious, cool refreshing taste, and I love that it doesn't have mayo as an ingredient, as so many sauces do! I really like cilantro so I used a full packed cup of the chopped cilantro and didn't find it too much at all. I served it with Southwestern Eggrolls, from this site, but it would be delicious on so many things. Will make often!

Tasty Lentil Tacos

Reviewed: Jun. 6, 2013
These are awesome! I made the recipe with the change of sauteing the onion/garlic in extra virgin coconut oil, as I never use canola. Also just used a whole onion instead of measuring out 1 cup. The lentils took 40 min before they were tender, and I didn't mash them at all. Love this recipe, and it will become a regular!

Chicken Marsala

Reviewed: Oct. 8, 2008
The whole family loves this recipe. After I've used the flour mixture on the chicken, I add the mushrooms to the little bit that's left in the dish, stir to coat them, and then scrape it all into the pan when it's time to add it. I think it makes the "gravy" a little thicker. Also I only use 3TBS of the butter/olive oil.

Classic Tossed Salad

Reviewed: Oct. 8, 2008
I have made this salad about 15 times now and everyone always LOVES it. I do not use any sesame seeds and only about 1/2 the olives. If you use bagged lettuce it is super quick to prepare. Kraft makes a dressing called "Zesty Italian" that tastes perfect with it. Not sure why the recipe states an 8oz bottle of dressing. Just dress it to taste; that ends up being nowhere near 8oz.

Russian Green Bean and Potato Soup

Reviewed: Nov. 8, 2010
I love this soup. I was kinda freaked out about adding the sauerkraut, not usually a fan, but it's what makes the soup IMO. I didn't have any fresh dill so I used approx. 1 tsp. of dried. Also, I had frozen organic green beans that I just broke into pieces and I thought it worked great. Served with buttermilk biscuits, which went perfectly cuz of the slight tang from the buttermilk. Will be making this soup ALL winter!

Creamy Blueberry Pie

Reviewed: Sep. 29, 2008
I served this at a family gathering and everyone loved it. I used frozen wild blueberries (these are the small ones), which I thawed. I love how it stays together instead of spreading across the plate like so many other blueberry pies!

Salsa I

Reviewed: Sep. 26, 2008
This recipe was perfect because I didn't have any limes or peppers. I used fresh tomatoes, garlic, and cilantro from my CSA and thought it was delicious.

Vegetable Chowder

Reviewed: Sep. 21, 2008
I love this chowder. The first time I made it I followed the exact recipe, but now instead of cutting up vegetables I use different Trader Joe organic frozen veggies-whatever combo I have-even asparagus. I only use 2 cups of cheese.

Tangy Turkey and Swiss Sandwiches

Reviewed: Sep. 21, 2008
These are so good! The whole family loves them. We add less mayo and use only 1 slice of cheese (plenty IMO) and that cuts down on the fat some. I use a whole small red onion instead of bothering to measure it. I used to make it using thyme, but now I add 2 heaping tsp of Trader Joes 21 Seasoning Salute instead, and I don't use any tomato. Lastly, butter one side of the bread, put it in the skillet or on griddle, butter side down, and THEN spread with onion mixture. Less messy that way!

This is really good. Quick and easy too! I make my own blend of spices instead of the taco seasoning packet.

Banana Muffins II

Reviewed: Jun. 12, 2013
These are superb. I used 3 bananas, but they were more like medium size. Instead of 3/4c. white sugar I used a slightly rounded, but packed, 1/2c. brown sugar. Perfectly done at 20min.

Zucchini Brownies

Reviewed: Sep. 12, 2008
These are really good. DO NOT drain or sqeeze the zucchini for this recipe. The mixture is like sand until you add the zucchini-then it turns into a batter. We ate half the pan with no frosting, makes it taste like a chocolate snacking cake, and then I made the frosting for the second half. I prefer it with the frosting.

Double Tomato Bruschetta

Reviewed: Sep. 4, 2008
Very delicious. Turns out great even with modifications. Used 3 different types of heirloom tomatoes, did not use any sun-dried or cheese. Pulsed everything in processor (be careful so it doesn't liquefy!)dumped it in a bowl and served it with toasted baguette slices. Make sure you process the garlic and basil first, to mince them, before adding the rest of the ingredients
