Double Tomato Bruschetta

Very delicious. Turns out great even with modifications. Used 3 different types of heirloom tomatoes, did not use any sun-dried or cheese. Pulsed everything in processor (be careful so it doesn't liquefy!)dumped it in a bowl and served it with toasted baguette slices. Make sure you process the garlic and basil first, to mince them, before adding the rest of the ingredients

Zucchini Brownies

These are really good. DO NOT drain or sqeeze the zucchini for this recipe. The mixture is like sand until you add the zucchini-then it turns into a batter. We ate half the pan with no frosting, makes it taste like a chocolate snacking cake, and then I made the frosting for the second half. I prefer it with the frosting.

Sauteed Apples

My son hates syrup on his pancakes so I decided to try this recipe as a topping for them. We both really liked it. I only had 1/4 cup brown sugar so I added about 1/8 cup of white also. I also did not have any cornstarch so I substituted 1 1/2 TBS. white flour.

Tangy Turkey and Swiss Sandwiches

These are so good! The whole family loves them. We add less mayo and use only 1 slice of cheese (plenty IMO) and that cuts down on the fat some. I use a whole small red onion instead of bothering to measure it. I used to make it using thyme, but now I add 2 heaping tsp of Trader Joes 21 Seasoning Salute instead, and I don't use any tomato. Lastly, butter one side of the bread, put it in the skillet or on griddle, butter side down, and THEN spread with onion mixture. Less messy that way!

Vegetable Chowder

I love this chowder. The first time I made it I followed the exact recipe, but now instead of cutting up vegetables I use different Trader Joe organic frozen veggies-whatever combo I have-even asparagus. I only use 2 cups of cheese.

Creamy Blueberry Pie

I served this at a family gathering and everyone loved it. I used frozen wild blueberries (these are the small ones), which I thawed. I love how it stays together instead of spreading across the plate like so many other blueberry pies!

Mayonnaise Biscuits

These are very good. Very light and fluffy. If the batter is runny or they don't rise, the batter has been mixed too much! I used a rubber spatula and gently folded ingredients till just combined.

Classic Tossed Salad

I have made this salad about 15 times now and everyone always LOVES it. I do not use any sesame seeds and only about 1/2 the olives. If you use bagged lettuce it is super quick to prepare. Kraft makes a dressing called "Zesty Italian" that tastes perfect with it. Not sure why the recipe states an 8oz bottle of dressing. Just dress it to taste; that ends up being nowhere near 8oz.

Chicken Marsala

The whole family loves this recipe. After I've used the flour mixture on the chicken, I add the mushrooms to the little bit that's left in the dish, stir to coat them, and then scrape it all into the pan when it's time to add it. I think it makes the "gravy" a little thicker. Also I only use 3TBS of the butter/olive oil.

Classy Green Bean Casserole

I've only made this recipe when I'm cooking for a lot of people. I've found that you can use 5-6 cans of the French cut green beans and keep all of the other ingredients the same; it tastes great and makes it less runny.

Sweet Potato Bread I

This bread is very good. I reduced the sugar to 1c. (1/2 brown and 1/2 white) and I found the sweetness to be perfect at that amount. I doubled the cinnamon, but kept the nutmeg the same, plus added 1/4 tsp of ginger and cloves. I subbed coconut oil for veg oil, and didn't add pecans as we're not a fan of them in quick bread. Baked about 1 1/4 hr. Perfect crumb and texture!

Applesauce Bars

Very yummy and super easy. My 13 year old son put the batter together in about 5 min. Baked this in an 8x8 pan for 30 min and it was perfect. Used 3/4 whole wheat pastry flour and 1/4 white. While it baked, I beat together butter, cream cheese, pwd. sugar, and vanilla to taste, and spread it on as soon as the bars came out of the oven to make more of a glaze. Delicious!

Oregon Salmon Patties

These were really good. I sauteed garlic and finely chopped bell pepper along with the onion. I did not have parsley, but I added a little dry dill, sea salt, (salmon I bought was unsalted) and I used aioli garlic mustard sauce (from TJ's) as I did not have dry mustard either; did not add any of the reserved liquid because they were plenty moist. Cooked them in olive oil instead of shortening...whole family loved em!
