Bread Pudding

Very yummy. I had to cut the recipe in half because I only had 2 eggs. However, I had 4 whole wheat hot dog buns that needed to be used (this amounted to about 6 cups of bread pieces; I just tore up the bread instead of cubing it). I decided to use all 6 cups even though I was using 1/2 of the other ingredients because other reviewers said the pudding was really soggy. I baked it for 1hr, without the water bath, in a 7x11 dish. I thought it turned out great with just the right amount of custard feel to it. I also added a tsp. cinnamon, 1/2 tsp. nutmeg, and used mostly brown sugar in the pudding mixture. The sauce is what really makes it awesome though!

Nell's Cabbage Salad

While this salad does taste good, some people are calling it healthy. The salad has a lot of oil (although at least it is olive oil) and ramen noodles are FRIED noodles and quite high in fat! So it's good, but don't think it can be considered "healthy".

Taco Seasoning I

The whole family really like the flavor. I'm kind of wimpy when it comes to spicy food so I only put in 1/8 tsp. of red pepper flakes. After tasting it, I will probably stick to that amount.

Ratatouille

This is SO GOOD!! Be warned, prep time is not 15 min! Between chopping all the veggies and sauteing the eggplant, it took 40 min. I seasoned every layer with Trader Joes 21 Seasoning Salute, and added basil and oregano to the eggplant when sauteing. Used baby bella mushrooms and Parmesan and Romano cheese blend. Did not cover the dish and was perfectly done at 45 min. Absolutely delicious!

Sour Cream Peach Kuchen

We actually didn't care for this. I mean it was fine, but IMO nothing special. My son thought it tasted eggy. Ended up throwing out 1/2 the pan after it sat in the fridge for a few days. Was disappointed, as all the other reviewers loved it so much!

Buttermilk Oatmeal Muffins

These muffins are identical in taste to a recipe called "No Corn Corn Muffins", a recipe from my childhood 35 years ago! My family made the muffins every Saturday morning to eat with scrambled eggs. I have been searching for muffins that reminded me of them, FOREVER! They are spot on and delicious. I only had old fashioned oats so I pulsed them in my food processor a few times, and I didn't have buttermilk so I used the 1TBS of white vinegar in milk trick. My muffin tins are old school (regular, small size) so I was able to get 12 muffins.

Black Bean and Corn Quesadillas

These make for a tasty and quick meal. I didn't bother to measure the onion; I just used a whole small one and used pepper jack cheese, so I didn't add the pepper flakes. Like other reviewers, I also baked at 350* for 10 min, and then broiled till golden.

Delicious Ham and Potato Soup

The first couple of bites I thought, this is good.....by the time the bowl was 1/2 gone, I was thinking, this is DELICIOUS! I used 4 med sized potatoes and more like 1/2c celery, 1/2c onion, and 1c ham. Will definitely make again.

Sweet Potato Pie I

I did not like how this turned out. With the 1/2c of butter, it had a greasy quality. We did not even finish this pie, and in our house that is unheard of!

Turkish Fish Stew

The whole family really liked this stew. I used cod; did not add any wine or lemon juice. It was fine over the couscous, but next time I think I'll just serve it with a good french bread.

Banana Streusel Muffins

Very good muffins. I used 1/2c brown sugar and 1/4c white in the batter, and kept the original amount in the topping. Doubled the cinnamon. I used a jumbo sized muffin tin, so I got six large muffins with the batter. Baked for exactly 20 min.

Ethiopian Cabbage Dish

This is so good! I cooked the potatoes and just added them at the end, so cooking time was about 30 min total. I also grated the carrots using the large holes instead of slicing. They cooked faster this way, but also I think they mix into the dish better. I didn't want to have 1/2 a cabbage to use up, so I used a whole bag of shredded cabbage (5 serving) and the amount was perfect. I used a curry which had turmeric and cumin, plus a bunch of other spices, and put in WAY more than the spices called for, probably about a TBS; I just kept tasting it till it was right! I use coconut oil instead of olive oil. So delicious! Served it with sliced ham.

Artichoke Chicken

This is a really tasty recipe, didn't wow me, but was liked by the whole family, so it will go into the meal rotation. I followed other reviewers advice and used part mayo, part sour cream, along with marinated artichokes. The thing I liked the most, is that it is simple and quick to prepare!

BAKER'S Peanut Butter Oatmeal Chocolate Chunk Cookies

I want something yummy, but also want to try and make it a little healthier if I can, so I used a white whole wheat flour and cut down the white sugar amount by half and they were delicious! I also used bittersweet, dark choc. chips instead of the semi-sweet.

Banana Crumb Muffins

I have made these twice now. The first time they were delicious, but I wanted them a little healthier and changed it a bit, hence the 4 * rating, as they are 5 * for the taste! In the batter, I subbed whole wheat flour, used 4 sm/med bananas, cut the sugar to 1/2c. using 1/4 brown and 1/4 regular, used applesauce in place of butter, and added 1/2 rounded tsp. cinnamon. In the topping I also used ww flour and 1/2 tsp cinnamon. They taste every bit as delicious and better for you!

Cafeteria Carrot Souffle

I made this recipe to have as dessert and can't stop eating it! Sooo good. I used my food processor to slice the carrots and then cooked them in the microwave with a little water. I just kept testing them every 3 min or so till they were very tender. Then put them back in the processor with the melted butter and sugar, till the mixture was very smooth. I added 1 tsp. of pumpkin pie spice and used 1/2c brown sugar and almost 1/2c white, which does not make it too sweet for a dessert. Frankly I didn't think it was too sweet even for a side dish. I also baked it for 1 hour.

Best Cream Of Broccoli Soup

I love how this broccoli soup doesn't use cheese! I did not add any celery, and took the advice of others and simply mashed it so it stayed chunky. Delicious!!

Apple Crisp II

This is so good! I had 7 golden delicious apples to use up so that's the amount I put in a 7x11 pan. I used brown sugar in the syrup instead of white, and added cinnamon. After mixing the apples with the syrup, I put them right in the greased pan and put all of the crisp portion on top. I used a full cup of oatmeal. Perfect amount of crunch.

My Favorite Sesame Noodles

Tasty recipe. Very similar to a Rachel Ray recipe which adds thinly sliced fresh spinach and sliced rotisserie chicken. Makes it even better!
