Asian Tuna Patties

Really good! I used a can of tuna and a can of wild salmon. I ended up adding another egg as it was quite dry at first. I added some fresh minced ginger, as I was making Peanut Butter Noodles (from this site) to go with, and that recipe call for it and I had extra! I used a reduced sodium soy sauce, cooked them in olive oil, and did not use any cornmeal. Will make often!

Black Chocolate Cake

I was craving chocolate cake and decided on this recipe because it looked like it would be very quick and easy to prepare. It was, and it is delicious! We couldn't even wait for it to cool all the way, so we're eating it warm with a homemade cream cheese frosting. I used a white ww flour that I always sub for all-purpose, I cut the sugar to 1 1/2 c., and I used butter because I never use shortening. I also used about 1/2 tsp. salt. I baked it in a 9x13 glass dish and it was done at exactly 30 min, though I did check at 25 just to be sure I didn't overbake. I will try the suggestions for using coffee next time, but I think it is very flavorful and chocolaty just with the water.*UPDATE* I used coffee last time I made this since a lot of reviewers recommended it. I actually think it tastes better not using coffee!

Five Minute Ice Cream

Love, love, love this! I made two batches, one with strawberries, and one with mangoes. They were both deliciously creamy; I can't choose which one I liked better! Both frozen fruits came in a 12oz size so I just used it all. I also only added a slightly rounded 1/4 c sugar for each batch and felt they were both plenty sweet so I will continue to use the less sugar amount. **UPDATE** I have made this many times now, mostly with mangoes. I now use plain nonfat yogurt, and only about 2 TBS of sugar. Still very delicious. I use the cream version for a special treat! Also, I only make it in my food processor; there is NO WAY my blender would be able to get it to the right consistency without it being to soft.

Garden Veggie Pizza Squares

I could eat this all day long! Definitely adjust the amount of the ranch dressing mix to taste so it's not too salty tasting. I made this for a appetizer party and it was the only one completely eaten!

Alyson's Broccoli Salad

I know I'm in the minority here, but I just thought this was so, so. It is quick and easy to prepare, and I followed a lot of reviewers advice to make a day ahead so the flavors meld. When I ate it though, there was nothing about this salad that made me want to make it again.

Vegetarian Chickpea Sandwich Filling

I really liked this; the rest of the family tolerated it. I subbed a small red and a small orange bell pepper for the celery. Left out the dill and used Trader Joe's 21 seasoning salute and pepper instead. Also added sweet relish like some people recommended. Ate it on toasted sourdough bread. I think I processed mine more than other reviewers, as it actually reminded me more of egg salad rather than tuna or chicken salad. Will definitely make again.

Mexican Bean Salad

Awesome salad. I cut the amount of the olive oil and red wine vinegar in half. Also used a slightly rounded TBS of sugar. We only ate 1/2 of the salad the first night, but that was fine because reviewers said it was even better the next day. They weren't kidding! Next day I wrapped some in a warm tortilla with a little sharp cheddar. Sooo good!! My idea of comfort food :)

Sesame Parmesan Zucchini

WOW, this is GOOD! I doubled the recipe, but used only 3 TBS of the olive oil. I will try cutting it even more next time. I agree with other reviewers that you only need to bake it for 10 min; maybe could have even got away with eight min. I love how quick and easy this dish is too. **Made this again and accidentally forgot the cheese, it was still delish and nobody even noticed!

Strawberry Pie II

Yummy! I used strawberries that I picked myself from a strawberry farm so I knew they were at the peak of ripeness. Because of this I cut the sugar to 1/2 cup, and thought it was just right. I also only used 1/2 cup of water.

Connie's Zucchini "Crab" Cakes

This recipe is great, especially if you bake them like other reviewers suggested so they're all done at the same time and with less fat. I could tell from the amount of zucchini that I would need to double the recipe to feed my family of 4. Doubling it made 12 patties, 3 each, which was the perfect amount. (3 med. zucchini). I just squeezed the zucchini after I grated it. I added the bread crumbs gradually, and ended up not needing all of them. I will make these often as we all enjoyed them!

Creamy Chocolate Frosting

This frosting tastes wonderful. It is light and creamy with just the right amount of sweetness. My 14 yr old son actually made it, and whipped it up in no time. He used skim milk as we did not have any evaporated.

Macaroni Salad

This salad is pretty ordinary, kind of a little bland. I gave it 3 stars because it is very easy to make and with more seasoning could be great. I am glad I took the advice of some other reviewers and cut the recipe in half; it still made a lot! We ate it for dinner with bbq ribs and baked beans. I plan to mix the leftover salad with tuna and more seasoning, so at least I get 2 meals out of it!

Crustless Spinach Quiche

Good for a quick meal. Husband gave me the whole "real men don't eat quiche" thing, but he admitted he really like it! Used red onion and cheddar/monterey jack cheese blend. Took reviewer's advice and used 6 eggs, which seemed like the right amount.

Mango Lassi II

My son loves to order a mango lassi at our fav. nepalese restaurant, but for some reason, it never occurred to me we could make them at home. Don't know why, as we are always making smoothies . Anyway, came across this recipe and it is delicious! I used frozen mango halves from Trader Joes, and used the ice also, so it was very thick. My son thought it tasted perfect, but I think the sugar could be cut a little.

Spinach Salad with Poppy Seed Dressing

Delicious salad. I used a whole bag of baby spinach; didn't have the salad greens. Added sliced strawberries along with the mandarin oranges. I used organic mayo from TJs instead of Miracle Whip, and added a dash of balsamic vinegar to the dressing.

Fish Tacos with Honey-Cumin Cilantro Slaw and Chipotle Mayo

These are fabulous! IMO the only time consuming part would be the fish, so just use whatever fish you want. I use a battered halibut from Trader Joes that I find tasty. While it's cooking in the oven I whip up the sauces and then brush the fish with the cumin sauce when it's done. The entire family found these delicious and I will be making these often! Oh yeah, I like to add a little drizzle of honey into the chipotle coleslaw also, the slight sweetness really brings all the flavors together.**UPDATE**I make this all the time and I no longer use any oil in the lime/cumin sauce; you don't need it! I also now use 1/4 c of mayo and 1/4 c of plain nonfat yogurt for the adobo sauce. Tastes just as good, but a little healthier for you.

Big Soft Ginger Cookies

These cookies are quick to make. My son and I had them oven ready in less than 10 min. The dough was soft, but I didn't have any problem with it being too sticky. We thought they were pretty good, but probably will not make again as there are other cookies we like better.
