Janet's Rich Banana Bread

Very yummy banana bread. I doubled the recipe but used 3 1/2 white/whole wheat flour, 2 cups of mashed banana, 1 cup of brown sugar and 1/2 cup of white (instead of the full 2 cups doubling would call for). IMO, it tastes so much better with less sugar; the flavor of the bread really comes through instead of mainly sugar. Did not add nuts. Also added 1 tsp. baking powder along with the soda. I saw where someone had creamed the butter and sugar, but I'm a lazy baker so I just followed the recipe melting the butter, and it turned out great. So moist and delicious!

Mediterranean Chickpea Salad

Nice side dish to serve with the Mujadarrah I made. I subbed cilantro for the parsley and rice vinegar for the lemon, as I didn't have either! Will for sure make again!

Lentils and Rice with Fried Onions (Mujadarrah)

Totally LOVE this dish! The first time I made it I followed the exact recipe and used only one onion. If you truly carmelize the onion it basically shrinks to almost nothing. The second time I didn't have any rice, so I subbed red quinoa with delicious results. I cooked the lentils and quinoa separate and combined once cooked. I also cooked the lentils in chicken stock and added some cumin and garam masala. I carmelized 2 med/large onions and next time will use 3! I strained plain yogurt (put a paper towel in a fine mesh colander set over a bowl) to make it thick like greek yogurt to add on top. Served it with Mediterranean Chickpea Salad from this site. So good!

Artichoke Chicken Casserole

We really liked this dish a lot, and it gets bonus points because it's super quick and easy! I used 1/2 mayo and 1/2 sour cream instead of all mayo. Besides adding 1/2tsp. of garlic powder, I also put in 2tsp. TJ's seasoning salute. Baked for 40 min because of really thick chicken breasts.

Pumpkin Oatmeal Chocolate Chip Cookies

These are pretty good. My 18yr. old son absolutely LOVED them. I halved the recipe but put in a whole (small) egg, a little over 1/2 the can of pumpkin, and 1 1/2c. of regular rolled oats instead of just 1c. I was glad I increased the oats. I also reduced the brown sugar by 1/4 and the white by about 1/2. Used regular chocolate chips too. Half the recipe made 3 1/2 dozen cookies using a TBS cookie scoop.

Slow Cooker Sauerkraut and Sausage

I liked this ok, but my husband and son thought it was quite good. I used kielbasa like so many recommended. I will make it again, at some point, but I will cook it on low for around 8 hours, and see if I like it better!

Beth's Spicy Oatmeal Raisin Cookies

I FINALLY got around to making these, and yikes, I've already eaten 7 of them! I think the flavor is delicious; I personally love the cloves in this recipe. IMO, they are plenty sweet (and I even reduced the white sugar to 1/4c.). I also used all butter. They did turn out quite thin and flat but when fully cooled are a great chewy texture with a slight crispness to the edges. I used a TBS sized cookie scoop and baked for exactly 11 min.

Quinoa and Black Bean Chili

With my recent quinoa obsession, I decided to try this recipe and fully expected my "chili must have meat" husband to just tolerate it. He actually really liked it, and the rest of us loved it. I left out the bell peppers and the jalapeno pepper and used a little more chipotle. Also threw in about a TBS of the adobo sauce. With 3 grown men and myself eating, the recipe was more like 6-7 servings. Served it with sharp cheddar, sour cream, and avocado. Super yum!

Curried Citrus Quinoa with Raisins and Toasted Almonds

This quinoa dish is wonderful and quick and easy to make. I cooked the quinoa in water and toasted my curry pwd. before adding. I didn't really get a lot of the citrus flavor as I think I added too much red onion. I love red onion though, so it wasn't a negative for me. Will make this a lot!

Quinoa with Sweet Potatoes and Broccoli

I'm totally obsessed with quinoa right now, so I loved this recipe! I cooked everything in coconut oil and used fresh broccoli and garlic (omitted the garlic pwd.) The sweet potatoes did seem to take a long time to cook. When done, I added raw sliced almonds, dried cranberries, along with cinnamon, ginger, and salt, to taste. Very yummy; can't stop eating it!

Black Bean and Sweet Potato Quesadillas

Very good meatless recipe but is fab when spiced up a bit more. I doubled the corn, used 2 cups of mashed sweet potatoes, and added LOTS of cilantro. I tripled the chili pwd and added cumin, garlic pwd. cayenne, and anything else I thought would taste good! I used a mixture of sharp cheddar and pepper jack cheeses, and just mixed everything together, except cheese, to simplify. Served it with avocado, sour cream, and salsa. Yum! Will absolutely make again.

Baked Coconut Shrimp

Really easy and delish. I bought finely shredded, unsweetened coconut so the pieces were very small and used 2 whole eggs as I didn't see using the yolks anytime soon and didn't want to waste them! I greased the baking sheet very well with coconut oil and did not have a problem with sticking. The shrimp were perfectly done at 5 minutes for each side. Served them with a marmalade/dijon/horseradish sauce, coconut lime rice (from AR), and steamed broccoli.

Coconut Lime Rice

Nice change of pace from plain rice. I used a finely shredded, unsweetened coconut and water instead of chicken stock. I was serving this with coconut shrimp and didn't want any flavor of chicken coming through! Very quick and easy to put together.

Pumpkin Pancakes

These are fantastic! The changes I made were 1 1/2c. of pumpkin, didn't use allspice, added heaping tsp. cinnamon, 1/2tsp. ginger, 1/2tsp. nutmeg, 1/4tsp. cloves. I combined the milk and vinegar and let sit while I whisked the egg, pumpkin, and oil (coconut) together, then slowly added the milk. Then I combined all the dry ingredients, in a separate bowl, by whisking also. Then carefully mix wet and dry using a folding method, ONLY till mixed. Do not add extra milk! The batter is thick, but scoops and pours just fine, and cooks up very light and fluffy. We all loved them!

Red Pepper Cream Sauce

This sauce is quite yummy but too mild tasting using all fresh red bell peppers, so I like to use one large fresh and two roasted (from a jar). Since I don't buy white pepper I just use a few grinds of black. I sub red pepper flakes for the cayenne and only put in 1/2 tsp. of salt. In addition, I add a couple cloves of minced fresh garlic. I add all spices right at the beginning, in with the cream and bell peppers. When it's done simmering I use an immersion blender and then stir in the lemon juice. Very easy recipe!

Apple Raisin French Toast Strata

I used french bread (and a couple of sprouted wheat hot dog buns!) torn into small pieces and stirred with a softened cream cheese/brown sugar/cinnamon mixture. Added that to the pan and topped with 3 med. apples, also mixed with a little brown sugar and cinnamon, and chopped very fine. I didn't bother to peel the apples, and I didn't add any raisins. Added the other 1/2 of bread on top and poured the egg/milk combo over. I used 6 eggs and 1 1/4c heavy whipping cream and 1 1/4c. whole milk and 2TBS of the maple syrup. Baked @ 350 for 45 min, with foil on the first 15 min. We drizzled with a little more maple syrup before eating. The closer it is to room temperature the more delicious it is!

Tres Leches (Milk Cake)

This is not the best tres leches cake I've tasted, but it is very good. It was easy to make, and everyone enjoyed it. I think it tastes best eaten the day it's made, after sitting in the fridge a few hours.

5-Minute Microwave Nutella® Cake

This is pretty good, but I'm going to have to experiment with the cook time a little before I find it delicious! I cooked it the full 2 1/2 min., and I think that was too long. It reminded me of a muffin in taste and in texture, which wasn't bad, but I want it to be more of a moist, barely cooked kind of taste! No self rising flour, so I used all-purpose flour and added 1/4 tsp. baking powder. Out of nutella, so I used unsalted peanut butter and also subbed coconut oil for veg. oil.

Mujaddara Arabic Lentil Rice

This was good but I think only because I used veg. stock instead of water, and I added garam masala. I think it would have been bland otherwise. I did have to use an additional 1 1/4c. of liquid, as it kept drying out and sticking to the pan before the lentils and rice were tender. I added salt to taste and put salt and cinnamon in with the sauteing onions. I cooked the onions way longer than the stated time, more like 40 min. I strained some reg. plain yogurt to make greek yogurt and served it on top. We ate this with a greek salad I made; all in all a tasty meal!
