French Toast I

Very good, basic recipe. The second time I made these I was going to double it, but only had 2 eggs so I increased the milk to 1c. to try and stretch the mixture a bit more, and it was still great. Used a sourdough bread and served with real maple syrup, yum!

Artichoke Stuffed Mushrooms

I love stuffed mushrooms but didn't really care for these. I cut the cream cheese amount in 1/2 and was glad I did because it was plenty. Had to add more/other seasoning than called for to give the stuffing mixture enough flavor. Also, I love onion, but it seemed to over-power the artichoke flavor and that was a disappointment.

Jamie's Cranberry Spinach Salad

We love this salad! I used baby spinach, so no need to tear into pieces, and a baby lettuce mixture. Also to simplify used already toasted almonds. Had to sub rice vinegar for white wine/vin, used walnut oil, and added sliced red onion(left out the minced), and blue cheese crumbles. Oh, and reduced the sugar by half so as not too sweet for us! So good, I could eat this all day long!!

Blueberry and Raspberry Pancake Topping

This was a super easy, quick, delicious topping that thickened up nicely. Giving it 5 stars even though I cut the sugar to 1/4 cup, because I cut the sugar in everything I make AND I don't think this recipe would be too sweet with the amount of sugar called for, just too sweet for us!

Hot Fudge Sauce II

I had the in-laws over for dinner and served this over vanilla ice cream for dessert. We all enjoyed it; it is good and very easy to make. I used a bittersweet chocolate and only used 3/4 c. of sugar. I also did not use all the cream, as at 3/4 c. it seemed to be a good consistency. I used premium chocolate and cream so it was not cheap to make and costs the same or more as some fabulous fudge sauces I can get locally, therefore, I'm not sure I'll make again but I'm glad I tried it.

Apple Walnut Salad with Cranberry Vinaigrette

Super delicious salad! I cut the dressing amount down to 1/4 and it was plenty of dressing for a 5 oz. package of salad greens (I used a spring mix)and used one apple. I added sliced red onion to the salad (and not in the dressing) and used only dried cranberries, which I let soak in the dressing I mixed up earlier using just a whisk. I had to use pecans instead of walnuts. As I stated I used 5 oz. of spring mix, but just added the amount of pecans, red onion, and cranberries I felt it needed.

Turkey and Quinoa Meatloaf

Fantastic recipe! I had never made turkey loaf before in fact I had never even bought ground turkey, but I will be doing so on a regular basis thanks to this recipe! I used a mixture of white/dark ground turkey, added more garlic, and had to sub ketchup for the tomato paste. Used sriracha for hot sauce, 2 eggs, and only added 1 tsp. of salt. Had to cook for 55 min. before it reached 160. Loved.

Glenda's Mandarin Orange Salad

Great salad we all loved. I cut the dressing ingredients in half and found it to be plenty and used walnut oil. I also cut way back on the sugar and still decided to give it 5 stars, because we are just fans of less sugar in pretty much all recipes and I believe a lot of people would not think the dressing was too sweet made with the original sugar amount. I used sliced red onion in the salad instead of adding reg. onion to the dressing. Will make this again for sure.

Spinach Chicken Parmesan

I only used 4 chicken breasts but doubled the spinach topping using a full 16oz. package of frozen spinach, which I thoroughly squeezed the moisture from it. Sauteed garlic along with the gr. onion and added more more/other seasoning in addition to what the recipe called for. Good enough to make again, mainly because it is easy and quick. Next time I will add more pimentos.

Poppy Seed Chicken II

Broccoli with Garlic Butter and Cashews

We eat a lot of broccoli so it was nice to have a new recipe we hadn't tried before. We didn't find it amazingly delicious, but we definitely liked it. I just cooked the broccoli in the microwave for about 1 1/2 min. to save on time.

Banana Chocolate Chip Cake

This is delicious. I followed the recipe exactly except for changing the baking powder to baking soda as so many reviewers suggested. I did not increase the sugar, as others did, and found the sweetness to be perfect. I had 4 small bananas (VERY ripe) to use up and they measured out to 1 1/3 cups, so they all went in. Baked in the pan called for and liked how it turned out, similar in height to a sheet cake. I checked it at 25 min. and was glad I did because it was totally done.

Mama's Asian Chicken and Rice

This is quite good. I doubled the sauce, but only used 1/3c. of brown sugar. I dredged the chicken chunks in cornstarch so as to avoid the last step and only browned them for about 2 min. Then I added the sauce and cooked, covered, for only 15 min. more. When done, I stirred in broccoli and red bell pepper that I cooked in the microwave for just a bit so it still had some crunch. The orange flavor in the sauce is good but pretty subtle. Served over basmati rice.

Cranberry and Cilantro Quinoa Salad

I added more bell pepper, almonds, and cranberries than called for but left out the carrots as I didn't have any. Totally loved it, though next time I might combine the lime juice with a little walnut oil and seasonings for the dressing.

Outrageous Chocolate Chip Cookies

These cookies are ok, but I don't see myself ever wanting to make them again. The texture is good, they hold together well, and they were perfectly done at 10 min. However, I thought the chocolate chip/oatmeal/peanut butter cookie combo would be delicious, and yet strangely, combining these 3 distinct cookie flavors makes them sort of bland. The main taste you get from these cookies is sweet,and I even reduced the sugar some.....

Janet's Rich Banana Bread

Very yummy banana bread. I doubled the recipe but used 3 1/2 white/whole wheat flour, 2 cups of mashed banana, 1 cup of brown sugar and 1/2 cup of white (instead of the full 2 cups doubling would call for). IMO, it tastes so much better with less sugar; the flavor of the bread really comes through instead of mainly sugar. Did not add nuts. Also added 1 tsp. baking powder along with the soda. I saw where someone had creamed the butter and sugar, but I'm a lazy baker so I just followed the recipe melting the butter, and it turned out great. So moist and delicious!

Mediterranean Chickpea Salad

Nice side dish to serve with the Mujadarrah I made. I subbed cilantro for the parsley and rice vinegar for the lemon, as I didn't have either! Will for sure make again!
