Mizithra Browned Butter Pasta

Reviewed: Mar. 15, 2007
Excellent! The only change I would suggest is to cook the butter until a caramel brown, let sit up to 4 mins to let separation occur, and strain the butter through a strainer lined with a paper towel for perfect browned butter.

Chocolate Chip Orange Zucchini Bread

Reviewed: Apr. 26, 2007
MMMMMM! FANTASTIC! The only changes I did was substitute 1/2 applesauce for 1/2 oil and doubled the orange zest. I baked the bread in 2, 8x8 glass baking dishes for 35 minutes. After it cooled I made an orange glaze to pour over the top of it. Oh man....this bread did not last long!!!

MMMMMMMMMMM! Baked it in a 8x8 glass baking dish and came out perfectly! Everyone LOVED this! I also used 1/2 the nutmeg and 1/2 pumpkin pie spice as others suggested.

Apple Stuffed Chicken Breast

Reviewed: Mar. 2, 2007
Really good and so different from the ordinary. I seasoned the chicken breasts with salt, pepper, and garlic powder. I added curry powder, onion powder, cinnamon, and brown sugar to the stuffing along with more bread crumbs. I tied the chicken breasts with twine so they'd stay together while cooking. For the sauce I omitted water and used white wine and apple cider instead, and added the extra stuffing mixture to pan 10 degrees before the chicken was done(so at 150 degrees). Took the chicken out of the pan at 160 degrees, added more brown sugar, some corn starch and water to the sauce. Next time I'll add more cheese to the stuffing mix. Great recipe!

Sage Pork Chops

Reviewed: Mar. 15, 2007
Very good flavor! Will be in regular dinner rotations. I suggest using thin pork chops. I used real thick ones and I think the flavors would have been much better with thinner meat.

Italian Breaded Pork Chops

Reviewed: Mar. 14, 2007
This was a pretty good and easy recipe. Next time I plan on smashing up the garlic a little, as opposed to chopping, for easy removal before browning the chops. I found it annoying to having to quickly remove the garlic pieces before they burned, thus distorting the flavor of the oil. Browned chops for 1 minute on each side and baked them on a rack to produce a less greasy, more crispy coating. Cooked them to 145 degrees (160 degrees would kill them). This worked out well. Next time I plan on using thin chops because I used really thick chops and I feel the flavors and textures would have been steller. Will definitely make it again!!!

Awesome Slow Cooker Pot Roast

Reviewed: Feb. 23, 2007
This recipe is so easy and tasty! I used beef broth in place of the water and kept everything else the same for the gravy. I only cooked a 2 lb chuck roast in the gravy b/c we didn't need that much meat, but I wanted to have a lot of gravy. I cooked the recipe on low for 9 hrs, checked the meat and it was done but not "fall off the fork tender" when I tried to lift it out of the crockpot. So, I cranked the temp up to high for an hour and it was PERFECT. I should have cooked it on high to begin with, but I put the roast in frozen (like always) and did not know if I would "overcook" the 2 lb roast if I cooked it on high for those 9 hours. I had to add a TB of cornstarch mixed with some water to thicken up the gravy a little more. This recipe is definitely a KEEPER!

Fluffy Pancakes

Reviewed: Sep. 29, 2013
Family loved it. Made them exactly as stated. Added frozen blueberries to 1/2 the pancakes (4) while cooking. These are nice and fluffy. I used butter in the pan in lieu of cooking spray and it helped to make the edges of the pancakes kinda crispy. Yum.

Excellent! I did use olive oil, but just a little bit! My potatoes took longer to cook too. Will make again!
