Enchilada Casserole III

Great recipe - very, very kid-friendly. The only thing that makes it a little bit easier is to use canned enchilada sauce, rather than mixing up your own. I did the recipe both ways, and found it was easier to skip that one step. You tend to need at least 3 cans (10 oz) of the sauce as it is very thin.

Sourdough Chipotle Chicken Panini

My family absolutely LOVES this recipe. Go easy on the chipotle chili powder to make it more mild. You can also use ranch dressing rather than caesar if your kids don't like caesar. This is such an easy leftover chicken recipe.

Sugar Cookie Glaze

LOVE, LOVE, LOVE this frosting. It is exactly what I was looking for. Very easy to use and dries extremely well. You can even stack your cookies. This opens up a whole new world of baking for me. Thanks.

Cheesy Potato and Corn Chowder

This is a great easy recipe. Very kid-friendly. I didn't really change a thing, except to cut the amount of the chile peppers in half. It was still a bit spicy for my 3-year-old.

Easy Mac and Cheese Muffins

The concept for this recipe is good, however there were a couple of problems -the breadcrumb topping was pretty dry. I think I will try a butter and cracker crumb topping instead. Also, the cheese needs to be a bit creamier. This recipe needs some work, but I am willing to try it again.

Slow Cooker Cranberry Roast

My family loved this roast. The gravy was delicious made from the juices and cranberry sauce. I think next time I will try it with whole cranberry sauce, rather than the jelly kind. I will definitely make this again.

Sam's Famous Carrot Cake

Great recipe, but a bit heavy. I didn't realize how dense this cake would be. Served it for Easter Sunday and it was a big hit. Used the Cream Cheese Frosting II recipe like other users.

Pasta with Tomato Cream Sauce

While this was good, it was a lot of work for something that you can pretty much get from a jar anyway - for example a pasta vodka creamy tomato sauce. I did make it exactly what the recipe called for and served it over tortellini, but it is definitely NOT a quick meal. It takes some time to prepare.

Slow Cooker Dump and Go Cheesy Chicken

This is one of my family's favorites. This is a very versatile recipe. You can add veggies at the end. We like this served over bisquits or rice. The chicken (if not overcooked) is very tender and delicious.

Slow Cooker Chicken and Dumplings

Nothing wrong with this receipe, but I would prefer the bisquits on the side. The biscuits cooked in the crockpot truly are like dumplings (not biscuits). I expected something different.

Cheddar Broccoli Chicken and Mashed Potatoes

This is a great recipe that can also be done in the crockpot. I think there is even another recipe on this site called "Cheesy Chicken." You just add the broccoli at the end. Throw everything in the crockpot and cook for 6-7 hours, used prepared mashed potatoes and frozen broccoli and you can have dinner on table in about 10 minuts top after work.

Easy Slow Cooker Pork Chops

I have made this recipe several times. My family just loves it. It is so easy and delicious. The one thing I would suggest, make sure you have sweet potatoes, not yams. Yams (orange) make it sweeter than it needs to. The sweet potatoes (yellow) have a less sweet taste to them. You can also slice them leaving the skins on and place them on top to cook. They stay togethe much better and the skins can be easily taken off before eating (though they actually taste pretty good).

Turkey Meat Loaf

This is a terrific recipe for turkey meat loaf. It is not dry and rather tasty. It does need a bit more flavor (maybe more terryaki sauce perhaps). The only thing I would not recommend is freezing the leftovers. When reheated, the bread gets really mushy. If you are going to freeze it, freeze before baking which my sister says works out fine.

Gerry's Chicken Enchiladas

This is a great base for a recipe. It is very time consuming, however. It is definitely a weekend meal. I would recommend marinating the chicken in some sort of fajita marinade before cooking. You definitely have to cut way down on the liquid - mine were pretty soupy. Other than that, great recipe. This was the first time I have ever made this for my family. Kids loved them. You can definitely tailor the recipe to suit your family's likes and dislikes.

Two-Tater Shepherd's Pie

What a wonderful change of pace for shepherd's pie. I made this last night in honor of St. Patty's Day. This is a VERY KID-FRIENDLY recipe. I used cream of chicken soup rather than mushroom and mixed veggies rather than plain beans. If you brown the ground beef the night before and use prepared mashed potatoes (Country Crock other other brand) it makes for a very easy after work dinner. I will definitely make this again.

Chicken Broccoli Shells

Loved it!! The kids ate it up. There were no leftovers. We did cook chicken up fresh (rather than leftover) - we sauteed it in olive oil w/ lots of garlic. Does take a bit of preparation time (boiling the shells), but with planning this is a very easy meal to make. Thanks for the recipe.

Easy White Chili

Wonderful recipe. I did what the others did and pureed 3 cans of beans. It made for a creamier "chili." This was more like a soup. I served it over brown rice and then it was more like chili. Definitely would make again.
