Pizza Casserole

Very good! I made a few small changes - whole wheat penne pasta & pizza ingreients we like - pepperoni, hamburger (1 lb.), green pepper, small can of diced olives, 4 oz. of pineapple tidbits. I used pizza cheese blend for the top. Great tasting!

Apricot Tea Cookies

Notes: 4 oz. cream cheese= 1/2 cup (in case you have a big Costco tub of it like I did!); for the sauce I would recommend putting it on a very low heat to simmer and stir it nearly constantly - I didn't and mine burned. I ended up using apricot preserves which worked great (although it will be all over your baking sheet as mentioned by another reviewer) I used a pastry cutter to cut in the butter and the cream cheese. It was nicely blended into chuncks but didn't form a ball. I lightly fomed it into a ball w/ my hands. The cookies look best if you only use pieces of dough that are cut into even sqaures with sharp points. I used a Silpat mat to bake which works awesome for cookies like this! Anyway, the end result is I thought they were good but I wasn't convinvced I was going to make them again because they were a lot of work. However, my husband LOVED them!

Dirty Diapers

These were really good. I omitted onions since my kids don't like them and we used shredded cheese and added it to the cooked hamburger and let it melt a bit. We also didn't cut the triangles in half. I used 2 cans of cresent rolls & about 1.5 lbs. of ground beef. The kids got to help make these and they had a great time "folding" the diapers. They tasted great - we'll definitely make it again.

Veggie Meatball Medley

My whole family loved this. The only change I made was I doubled the recipe but only used 1 can of soup (instead of 2) & about 1/2 can of milk. I did this because we don't like things too salty and I didn't have any Healthy Request soup w/ lower sodium. I also used lower sodium soy sauce which is what I always use. My little boys helped to shape the meatballs so they loved the meal even more since they "helped". I will definitely make this again!

Kelsey's Favorite Stuffed Green Peppers

Really good! I substituted Prego for the sauce & seasonings. I also followed the advice of another review and blanched the green peppers first (2 min. in boiling water) then baked for about 20 min. I lightly sprayed the pan w/ cooking spray and put a few TBSP water in the bottom of the pan. The green peppers turned out soft but not soggy. The rice mixture tasted great.

Dutch Apple Loaf

Wow! This is delicious. I made 3 minor changes: I added 1/2 tsp. cinnamon to the mix, omitted the nuts & left the apples unpeeled. Since they were unpeeled I chopped them in a small chopper to get smaller pieces - not a mushy mess just finely chopped. I tested the loaf a few times after 50 min. and mine took 60 to bake completely. The bread is moist and has the perfect amount of sweetness. The topping tastes fabulous. I gently pushed it into the top of the loaf before baking to make sure it didn't fall off and it's staying on pretty well. It made a substantial sized loaf. I will be making this for holiday gifts. Wonderful recipe!!

Gobble Up Granola Snacks

Loved it. Based on reviews I used 1/3 c. honey, 1/3 cup light corn syrup and 2/3 cup brown sugar. Mine stuck together great and easily cut into bars. They are soft and slightly chewy. Not like the texture of any packaged granola bar that I've tasted. I used creamy peanut butter. I also added 1 tsp. cinnamon to the dry mix. I think 1 key might be make sure it comes to a boil. Also, make sure to mix well. I just cooled mine in the pan on the counter - I read a few reviews where they were cooled in the fridge. This shouldn't be necessary. Next time I may try w/ cranberries and add some salt to cut down the sweetness? It tasted really good and they held together great but I think they would taste even better if I didn't taste so much honey. (I know that's an addition - not the original recipe so maybe that's the problem!) Either way I will definitely make these again.

Three Pepper Pilaf

Awesome! I think the turmeric is an important part. I bought it for this recipe and really liked it. I used frozen chicken breasts (2). I added more water to the stock (maybe about 3 cups more) to cover the chicken. Boiled until they looked cooked(about 10-15 minutes) then put them on a plate to cool. I then cut them into pieces and microwaved to make sure it was cooked through (because it was frozen it didn't cook in the center). I followed the instructions for the skillet cooking except I used instant rice - about 4 cups. I brought the rice mixture to a boil and then covered for the rice & peppers to cook. I forgot to add the tomatoes. It tasted wonderful. I'll definitely make it again.

The Best Rolled Sugar Cookies

These turned out great! Perfect taste & texture. No cracking. I kept the recipe the same except I doubled the vanilla. I thought about doubling the whole recipe and I'm glad I didn't - I thought it made a lot. I made circle coookies (to decorate like baseballs) that were slightly larger than 3". 1 recipe made 35 cookies. A few tips: Lightly grease the sheet w/ spray (I used Baker's Joy spray which has flour added)- recipe says ungreased but that made it really hard to remove; As suggested by another I used powdered sugar on the board & a little on top of the dough before I rolled it - worked awesome - no sticking; After being refrigerated for about 6 hours the dough was really hard - let it sit out for about 20 minutes before you start to roll then it will be perfect to work with; Bake until edges are barely starting to brown; remove from cookie sheet right away to cool on rack or counter.

Excellent! I doubled the recipe except for the lemon juice (left that at 1/2 cup). After the water had boiled I added the tea bags, lemon juice & sugar. I covered the pan and let it steep for 2 hours. Loved it!

Easy Lemon Cookies

These truly are simple and taste great! I used a lemon instead of the extract (it took less than 1/2 of a lemon). They have great flavor and look nice. They powdered sugar hardly can be seen after baking so it looks best to sprinkle them again after baking while they are still warm. I'll definitely make these again - probably many times!

Slow Cooker Chicken and Dumplings

Very good! I tore (using 2 forks) the chicken into pieces after it had cooked for a while and then stirred it all together. I also added vegetables as other reviews have suggested. I cooked the mixture w/out the biscuit mix for 2 hours and then added the biscuits and cooked for 2 more hours on high. I've tried this w/ adding a can of broth and then adding the water and I think I like it better w/ just water. If you like things saltier add the broth. Also, using 1 can cr. of celery & 1 can cr. of chicken works great. ** Tried it again - this time w/ butternut squash, celery, carrots. 5 frozen chicken breast tenders. 1 can cr. of chicken & 1 can broccoli cheese soup. 1 cup chicken broth. 1 cup water. Cook for about 9 hours on low. Shredded the chicken after it was cooked. 1 can biscuits (flattened, seasoned w/ pepper & sliced)on top - cooked for 30 minutes. It was delicious!

Vegetable Lo Mein Delight

Really tasty! The only subs. I made were omitting the onions (I used some dried onion flakes instead) & I used frozen sugar snap peas. The crunchy chow mein noodles really add to the taste of this dish. Even the kids really liked it!

Apple Banana Smoothie

Changed a few things based on what I had on hand: juice was strawberry banana, apple was Granny Smith. Also addede 1 tbsp. flax seed. Tasted great! Next time I'll double the recipe so we can have more!
