Flourless Oatmeal Blueberry Pancakes
These are great! We used whole rolled oats, so they were a little more dense and chewy like a breakfast cookie. We like to spread peanut butter and raisins on them and serve apple slices to make them more like a meal. mmmm. - i think the honey causes them to burn a little more easily, so watch them closely

Scrumptious! I ended up being short on almonds, so used 2c. ground almonds and 2/3 c. almond powder (from the asian market) - gave it a delicious ameretto flavor. ABSOLUTELY GREASE YOUR PANS WELL, OR YOU'LL HAVE A BIG MESS. I also found that my glaze turned brown, and I know my oven bakes on the hot side, so I made sure the oven light was off and reduced the temp and cooking time. The last batch I cooked for 15 minutes at 315 degrees, and they were just barely starting to brown. Has anyone else experienced the temp/time being too high/long?

Tacos De Matamoros
This is so yummy! and just like the taco meat I used to eat as a kid. I have been wanting a taco meat recipe like this for a long time. I made it with half beef, half venison and used 2 tsp of Kosher Salt instead of the 1 tsp listed - which made the sesoning perfect. The ONLY reason I gave this 4 stars is because I didn't like watching over it for 1.5 hours to continue adding water. I'm going to try a crock-pot version and see if it works. I'll let you know!
