Chicken Stuffed Peppers with Enchilada Sauce

Excellent dish. We loved everything about it. I will probably go with unsweetened chocolate next time and a little more spice in the sauce. For the kids I put the stuffing into con tortillas to make enchiladas and they loved them, already requesting it again.

Lemon Garlic Tilapia

Awesome. This recipe is so easy and it turned out terrific. I did saute the garlic in butter first, then added the parsley and lemon juice. Poured it all over the tilapia and baked for about 10 minutes. The fish was so flavorful and moist. Whole family loved it. Even my non-fish-eating daughter is asking when we can have it again.

Baby Back Ribs

Unbelievable! So easy. I followed other reviewers' suggetions by putting rub on the day before and wrap in foil. Cook them in foil for 2 hours, then add the BBQ sauce for grilling or broiling the last 30 minutes. They come out perfect every time, falling right off the bones. One note: careful when turning them on the grill, they are so tender they fall apart.

Cha Cha's White Chicken Chili

This is a great, easy white chili recipe. The entire family gave it 5 stars, including my chili-snob son. Based on other reviews, I cut the jalapeno and cayenne amounts in half and doubled the green chilis as my mother-in-law doesn't do spice. I also put 1/2 can of beans in the food processor to thicken it up a bit. It turned out terrific. Thanks for the recipe.

Chicken Satay

Great recipe. This was so easy to make. I added 1/3 cup of coconut milk to the other ingredients. Marinated for 4 hours and the chicken had a ton of flavor. I would serve with a peanut sauce next time though.

Braised Balsamic Chicken

I made this to serve to guests with children. I served it with pasta and asparagus. Everybody ate it! It was tasty and appealled to all ages.
