Potato Chips

Warning, this is more of a review of technique than of the recipe as written. Why? Because I did not have any white potatoes, so I used a small sweet potato, I do not own a mandoline, so I used a potato peeler, and I skipped the oil step (as suggested by another reviewer) and used cooking spray on a piece of parchment cut into a round, then sprayed the top of the sweet potato pieces. Cooked for 5 minutes in my microwave, light sprinkle of Kosher salt and oh my, yummy! Sweet potatoes need to be cooked to a light brown as well so they will crisp. Great idea, this could become a habit of mine!

Simple Carnitas

Amazing, the flavor I have been looking for in a carnitas recipe! I also cooked the trimmed pork butt whole in a slow cooker. I kept all the ingredients as written. Very happy with the results.

Chocolate Velvet Ice Cream

Creamy, smooth and rich. I made the recipe with the ingredients just as written but I did take another reviewers advice and simply put all the ingredients in a blender and gave it a good long whirl, scraped the sides with a spat and whirled it again. Ice cream turned out perfectly and it is even better after curing in the freezer overnight.

Mocha Chocolate Chip Banana Muffins

Changes and sustitutions like so many others suggested: 1/2 cup unsweetened applesauce and 1/2 cup butter for the margarine, also reduced sugar to 1 cup. Increased the instant coffee to 2 tbl, disolved in 1 tbl leftover coffee from breakfast. Replaced one cup of the white flour with whole wheat flour. Loved the muffins as they are not to heavy on the banana flavor. Great recipe for using up ripe bananas, thanks!

Spinach and Sun-Dried Tomato Pasta

I also doubled the garlic and sauteed some shrimp in butter and garlic on the side for use meat eaters in the family. Delicious, quick and easy!
