Apple Muffins

These are awesome! I did follow the others suggestions to double the cinnamon and I almost tripled the apples. I also had to add a little extra apple juice because it was a little dry before I added the apples. I added a topping made of brown sugar and cinnamon. They are yummy, moist and just perfect...not to mention they aren't so bad for ya. I will be making them often!

Summer Feta Burger with Gourmet Cheese Spread

This was a fabulous recipe. I actually used deer meat and added green bell pepper along with the onion. It was delicious. My husband said he would expect to have this at a nice restaurant - not your typical homemade hamburger, but delicious!

Chicken with Asparagus and Roasted Red Peppers

This is a fabulous and easy receipe. I didn't have chicken broth on hand so I drained the roasted peppers juice and water to make 1/2 cup. It worked perfectly fine. I also added onion. I served with rice and broccoli and it was perfect and a very healthy meal.

Southwestern Egg Rolls

This is a great recipe. I did take the advise of other reviews to bake these at 450 degrees for about 15 minutes - very nice and crispy. I mostly followed the recipe. I added extra chicken, spinach and corn. I did not include the beans. I also added tobasco to add an extra kick. I sprayed both sides of the tortillia with cooking spray before cooking. Next time I will add chopped green chilies. My husband is on Weight Watchers and this is approximatley 7 points per serving - that is using 2.5 chicken breast.

Eggplant Parmesan II

I thought that this was a great recipe. Neither my husband or I eat eggplant and we both liked it. This was my first time cooking eggplant. I did salt it so that it would sweat and was sure to dry it real good. One eggplant would have been plenty. I used 2 egg whites and one cup of bread crumb. I could have used just half cup of bread crumbs and it would have been just right. I had lots of left over crumbs. I baked on each side for 10 minutes and they were not as crispy as I would like, so I broiled them for 4 min on each side and they were perfect. I also baked them on my pizza stone coated with cooking spray and they turned out perfect and crispy. I used crushed tomatoes instead of sauce to save some calories. I put the crushed tomatoes on the bottom and then I sauteed chopped bell pepper and onion and missed that with a can of diced tomatoes which I put on top. I was wanting to add more vegi's and it turned out yummy! Great recipe.

Chicken Tortilla Soup V

This is a great and well loved recipe. I also boil the chicken and shred it as suggested in other reviews. I also saute the onion before I add it to the pot. I use the water/broth that I boilded the chicken in instead of the cans of chicken broth - just to cut a few calories and I use almost 3 cups. It is very good and a meal that we cook often.

Good Old Fashioned Pancakes
