I thought that this was a great recipe. Neither my husband or I eat eggplant and we both liked it. This was my first time cooking eggplant.
I did salt it so that it would sweat and was sure to dry it real good. One eggplant would have been plenty. I used 2 egg whites and one cup of bread crumb. I could have used just half cup of bread crumbs and it would have been just right. I had lots of left over crumbs. I baked on each side for 10 minutes and they were not as crispy as I would like, so I broiled them for 4 min on each side and they were perfect. I also baked them on my pizza stone coated with cooking spray and they turned out perfect and crispy.
I used crushed tomatoes instead of sauce to save some calories. I put the crushed tomatoes on the bottom and then I sauteed chopped bell pepper and onion and missed that with a can of diced tomatoes which I put on top. I was wanting to add more vegi's and it turned out yummy! Great recipe.
