THE Pasta Salad

Reviewed: Jan. 29, 2013
This was just okay. I wouldn't call it DRY, but definitely not CREAMY like I was wanting. I found it bland when the recipe was followed exactly. Definitely don't omit the hot sauce. I used "Frank's". My husband can't stand anything spicy and he said it wasn't hot at all. Unless you LOVE peas I would half the peas and add other veges, or just half the peas. Also please note that this makes A LOT. 7 servings would be if it was the main course. Since I made a double batch I went back and added a few things so we can get through it all; doubled the ham, added cherry tomatoes, a bell pepper, celery and carrots. I also added more sour cream and mayo. Still a bit bland, needed SOMETHING, not sure what (as stated in previous posts). You could experiment with lemon juice, dill weed, celery salt, vinegar etc to figure it out. (Or you could just try another recipe).

Pumpkin Pancakes

Reviewed: Oct. 3, 2012
I followed this recipe EXACTLY. These had a nice flavor but were too dry and dense. I'm sure there's things you could do to make it fluffier like using pastry flour or extra eggs but I feel that if you don't follow the recipe exactly you can't give it a fair star rating so I always follow it exactly the first time. Next time I'll definitely add an extra egg, more milk and probably some blueberries or chocolate chips to make it fluffier and more moist. EDIT; made them a second time with a few changes to make them HEALTHIER :) sub 4 egg whites for eggs, sub 2 Tablespoons applesauce for oil, sub 1 cup protein powder for 1 cup of flour (depending on your brand of protein powder you may not be able to do this or you may need to add extra baking powder to make them fluffy), completely omitted brown sugar, sub 3 teaspoons pumpkin pie spice for spices and added about 1 cup blueberries. Added a few Tablespoons extra milk until the batter seemed to pour a little nicer. I found with these changes the recipe was a much better consistency. Pancakes were moist, taisty and liked by all. (Plus MUCH less fattening and fewer carbs)

Cherry and Raisin Loaf

Reviewed: Dec. 26, 2010
All purpose flour works great! Don't need to go out and buy "bread flour" if you don't already have it. I've made this recipe 2x now. The first time I got busy and forgot to add the raisins and cherries. But it was still really great. We ate it that time with peanut butter and jelly. This one is definitely a keeper :-)

Apple Breakfast Bread

Reviewed: May 14, 2010
I followed the recipe exactly as I always do the 1st time so I can give it an accurate rating. It turned out really dry. Can barely stand eating a bite with out taking a sip of milk. Some previous reviewers suggested grating the apples instead of simply dicing them. This may help but I'm sceptical that that would make the big difference that was needed. I may try the recipe one more time and try adding some buttermilk.

Poppy Seed Bundt Cake I

Reviewed: May 7, 2010
We thought this cake was ok. Nothing really wrong with it, it was moist and had a nice "crust". But it just didn't "wow" us. Probably won't make it again so I can keep looking for a poppy seed cake that has the wow factor.

Irish Potato Casserole

Reviewed: Apr. 29, 2010
I liked that this recipe can be made easily from ingredients that I usually have laying around the house. I will double the recipe next time as it barely covered the bottom of the pan. Plenty of room for variations such as sour cream, bacon, etc.

Egg and Hash Brown Pie

Reviewed: Sep. 11, 2009
This recipe was good but browning the hashbrowns definately was a plus. We used regular onions and they were good.

Strawberry Avocado Salad

Reviewed: Sep. 7, 2009
Pretty appearance, easy to make, refreshing salad! I only gave it 4 stars since it was too sweet and the sugar gave it a grainy texture. It will be a 5 star recipe after I eliminate the sugar. This made more than enough for 2 but we ate it all any way since it was so yummy. However if you are having a big dinner you may want to make a bit less since it doesn't seem like it will keep well. Please see my lovely photo :)

Sour Cream Chicken

Reviewed: May 7, 2009
I had no white wine on hand or apple juice (which is my usual substitute for white wine) so I got creative and mixed in pineapple juice. I think it added a bit of a tangy flavor but not very noticeable. All in all it was a recipe which made good leftovers. My boyfriend and I both enjoyed it.

Apple Orchard Punch

Reviewed: Apr. 11, 2009
This recipe served 8 adults and 2 kids well. I used sprite instead of ginger ale just because it's what I had on hand. My mom stated "This is good" (and she ALWAYS has something to say). I will use it many times again I am sure.

Mack's Tunaburgers

Reviewed: Jan. 13, 2008
Sorry Mack but I was not a fan of these burgers. They were too salty and seemed mushy even after being cooked throughly. I think this recipe has potential so I may experiment with the recipe to see if possibly baking them or something like that could help the recipe at all. By the way the baby (15 months) liked them a lot. She gobbled them up. It was a less messy way of getting her to eat tuna (tuna salad is such a mess with her). Thanks for the recipe, sorry for the bad review.

Salmon Patties I

Reviewed: Jan. 13, 2008
This recipe provides a nice base recipe that you can make "as is" but would also be easy to add to and change up over and over (the sky's the limit). The cooking method was perfect, patties came out brown on outside and warm/soft on inside. Leftovers were a big hit with my husband who likes to just grab something out of the fridge to snack on. He would just grab one and eat it like a cookie (cold and all). I will definitely make these again. Oh; I did add an extra egg, I try to stick to the recipe exactly the first time but I felt the extra egg necessary to keep the patties from falling apart.

Jo-Ann's Power Bars

Reviewed: Jan. 12, 2008
This was a pretty good recipe however it came out very sweet. Next time I will add only 1 tablespoon brown sugar or possibly omit it completely. Also to suit the recipe to my nutrition desire I will add 1 cup of applesauce so that I can use only 1/2 tablespoon of oil. I will also try adding an extra egg and and extra cup of grapenuts so that there will be more protein. The cooking method in general (time, temp etc) was perfect and they came out nicely. I will definitely use this recipe again as it is a great base that can be "tweeked" time and time again to keep from getting bored. THANKS JO-ANN!!

The Best BLT Dip

Reviewed: May 14, 2007
I made this recipe for a party and it was a big hit among the people who like mayo. I made only 1/2 a recipe with a full pound of bacon. I thought it needed a little spicing up so I added about 1/2 a packet of ranch dip mix, some onion powder, salt and pepper and about 3 green onions (also the onions sprinkled on top made the dish more colorful) I also changed the recipe to be equal parts mayo and sour cream. I served it with cut up bread but the leftovers were good w/ anything from crackers and chips to spread on plain white bread. I will make this recipe again for sure, although next time I am going to spice it up even a bit more

Cheesy Eggplant Casserole

Reviewed: Feb. 7, 2007
I didn't really like this recipe. I followed the directions exactly using stove top stuffing. I found the taste of the stuffing overpowered the taste of the eggplant. Also the leftovers didn't reheat well in the microwave.
