These were absolutely delicious and easy to make. The cupcakes were light, moist, and tasty. They were a very big hit. I got 24 cupcakes plus one mini-loaf out of the recipe. I also pre-measured and mixed all my dry ingredients together the night before and kept them in a sealed container until I was ready to complete the recipe and bake them the following morning. For icing, as a short-cut, I used two containers of store-bought cream cheese frosting (creamy style), added the zest of 1 orange and the juice squeezed from ½ the orange and mixed with a wooden spoon until creamy. I highly recommend these -- I'm sure you'll love them.
